COMMERCIAL DESCRIPTION
This abbey ale is a collaboration between Sierra Nevada Brewing Co. and the monks, at the Abbey of New Clairvaux. Belgian inspired golden ales are noted for their devilish personalities, but there is nothing mischievous about this complex ale. It is brilliant golden and layered with notes of summery apple and pear and pepperv spice from the use of a traditional Belgian yeast strain. A portion of proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery 1931 and planned use the stones for a castle even grander than his famous San Simeon. Although Hearstís, plans crumbled. these historic stones will rise again in a California Cistercian abbey.

This pours a golden color with a booming off-white head, but fortunately not a gusher as I thought it might be (mostly because of the warning label on the bottle). Thereís banana and citrusy esters in the aroma, with some funky yeast, clove notes, wheat, and a light cinnamon spice. All around itís a nice, fairly complex scent. Highly carbonated brew and crisp on the palate. The flavor has a pleasant dry spice that compliments the sweet fruity esters well. Apple and pear seems to come to mind. While Iíd hardly call this overly funky, thereís enough funky yeast to satisfy. A bready yeasty note thickens the body a bit but leaves it still very drinkable. I enjoyed this. Itís not world class or anything but does a lot of things right. So far Iíve been very happy with the Ovila line of beers Iíve tried so far.

Caged and corked 750mL pours with a deep yet sort of pale coppery sort of gold body supporting a weak dirty white head of foam. The aroma offers up spicy Belgian yeast, apple and bubble gum estery notes. The taste seems straight up Triple like to me with a mix of sweet apple notes, Belgian yeasty spices, a raisin note here and there and just a hint of wild yeast . . . maybe. Good stuff.

Beer from recent Maine trip. Slightly boozy golden, but still good drinkable and more of a Belgian strong. Big foamy lasting head. Nice yeast, simple and slightly sweet. A little orange citrus. Soft mouthfeel.

My Bottom Line :
This Belgian-style Strong Ale is authentic from aroma to mouthfeel, from flavor profile to finish. Great job.

Further Personal Perceptions :
-A fluffy head of foam garnishes the misty blond.
-Carbonation is appropriately expansive. This is highly effervescent.
-Lots of doughy yeast flavors adorn herbal hops, bubblegum esters and light citrus fruit.
-Alcohol warmth seals each sip.

Bottle. Gusher. Massive carbonation, huge white head, golden hued with a light haze. Aromas are estery, mildly malty, lightly phenolic, low 4VG clove, pepper, pear, lightly herbal hop, grassy, ripe apple. Flavors of pear, vanilla, almond, sugary (dry though), floral, sage, pepper, alcohol. Dry and herbal. Lively bubbles, very dry with mild esters and stronger phenols. Good!

750 ml caged and corked bottle, bottled on May 2, 2012. A couple seconds after I got the cage off, the cork shot itself out of the bottle like a rocket and whacked the ceiling pretty good, so you might want to be careful opening this brew. Served in a Unibroue tulip, the beer pours a slightly hazy dark gold color with a couple inch off-white head. Head retention and lacing are both good. It smells like pears, apples, Belgian yeast, bready malt and peppery spice. Taste is similar to the aroma, it tastes like pears, peppery spice, cloves, apple juice, and bready malt. Mouthfeel/body is medium, with high but soft carbonation which helps make this brew easy to drink. I think itís a good overall beer, Iíd certainly try it again in the future. $9.99 a bottle.

750. After I took off the cage, the cork burst out on its own and hit the ceiling. Huge carbonation. Light. Grape and spice. Slight funk. Slight sweetness of fruit. Extremely tasty.

On tap at the Blind Tiger, NYC during their Sierra Nevada event. Pours clearish gold with a fine, white head. Light tangy citrus in the nose, plenty of rich, bready malts. medium sweet flavor with some alcohol kick, dough, modest citrus, very light funk. Medium to full bodied with fine carbonation. Moderately warm finish with rich bread character. Nice stuff, well balanced.

Pretty beer, lightly hazed gold with a lovely lasting head. Aroma is lightly of pils malts and faint Belgian yeast spice. Flavor is similar, but with a nice fruity note in the background, mostly apple and pear. Very well done, especially for an American brewer taking on a Belgian style. Enjoyable in a Duvel style.
