COMMERCIAL DESCRIPTION
This abbey ale is a collaboration between Sierra Nevada Brewing Co. and the monks, at the Abbey of New Clairvaux. Belgian inspired golden ales are noted for their devilish personalities, but there is nothing mischievous about this complex ale. It is brilliant golden and layered with notes of summery apple and pear and pepperv spice from the use of a traditional Belgian yeast strain. A portion of proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery 1931 and planned use the stones for a castle even grander than his famous San Simeon. Although Hearst’s, plans crumbled. these historic stones will rise again in a California Cistercian abbey.

750 mL bottle with a very appropriate pressure warning on top. Cork removes itself across to the other side of the room once the cage is undone. Pours clear golden with many fine particles and a large but receding white head (second half of the bottle is very cloudy). Aroma gives yeasty bubble gum, clove, and apple. Flavor shows apple, lightly toasted biscuit, herbal, peppery, and bubble gum notes. Mmm, very nice little beer here.

750ml bottle consumed by myself. Pours a hazed orange with an enormous white head. Aromas of clove, citrus. Taste is dry and lightly bitter. Flavors of clove, spices, yeasty esters, hot alcohol. Not quite quenching because of the alcohol heat. Finishes dry and hot. Mediocre.

This pours a golden yellow color with lots if carbonation for a thick, fluffy head. The aroma is very yeasty with some hints of citrus. Rich yeasty taste very filling decent spices flavors there are sure to fill your stomach. Pretty decent for an American made Belgian brew but this was still missing something to put it over-the-top.

750mL, corked and caged, and the cork started moving by itself as soon as I removed the baling and eventually removed itself. Nose is straightaway malt with very herbal and spicy yeast, but also pear drizzled in reduced maple syrup, light oak and vanilla, really an interesting mix! Pours bright orange-golden with strong carbonation and a soapy off-white head. Airy, lightly tangy and yeasty taste, light alcohol warmth, fat-bodied thick malt but that’s not a source of malt. Pepper yeast character and mixing fruity and herbal notes scream saison yeast or at least something closely related. Orange, straw, and, with time, red berry and very faint cherry. Overall clean and refreshing despite the size, and still very bright and fresh. Hops are muted but present enough for balance. Malt is sunny, golden, bitterness low, sweetness medium. The huge effervescence is both a positive, as this is about as close to to Champagne as I’ve come in almost 5000 beers (save the occasional traditional North German wheat beer!), and a negative, as the dense airy mouthfeel usually only encountered in gushers (this is not) loses its charm after a few ounces. Still, a mighty achievement, and an enjoyable one.

With a little warm-up toward room temperature and enough degassing, this one started to grow on me. Soft and mellow feel but intensely perky flavor. [from 3.5 to 3.8]

Poured as a taster at local shop. Pours a golden color with a creamy white head. Aroma of apple, wheat, spices. Tastes are similar, and it is quite creamy on the palate. Really nice and refreshing.

P: A billowing 3 inch of white ricky head hovering over a sea of murky golden apricot. Retention is ridiculous and just seems to get creamier. Yeast specks sprinkle the creamy head while lacing bubbles around the edges. S: Sweet stone fruits, citrus, big Belgian yeast nose, pils malt, sourdough and dried wheat. Spices and floral aroma are also present. The great yeast aroma is the heavy hitter here. Once agitated stale bubblegum comes out and the booze becomes more present. T/M: Old leather, slightly smoked grains, clove, cinnamon, white pepper, stone fruits, spice rum soaked apricots and a hefty dose of dry yeast. Finish is super dry with lingering sourdough, bitter green bananas and kale. Vivacious carbonation in a medium body that dries out the palate upon entering. O: A beautiful presentation of a delicious beer. Gotta love BSPA’s. super dry, spicy and great fruit sweetness. I’m glad I was able to find this Ovila and I look forward to enjoying the quad soon. 750 cc bottle. Pours hazy golden with off-white head. Nose is yeasty funky spice, hopcitrus. Tastes hopcitric, funky and yeasty with spicy and hoppy finishing notes.

Bottle from Beer Frog Spring Hill. Pours a hazy yellow-gold with a white head. Nose is a nice pear and apple burst with some sweet malt, some white grape, and some yeast. Flavor starts apple and pear then goes sweet grape and sweet malt followed by yeast, apple, and some drying in the finish. Medium in body and a very nice golden ale reminiscent of a nice German Auslese.

750ml bottle from Imbibe Wine. Nose is spicy with cloves, candisugar, and a flowery note. Clear gold with a big white head. Flavor is lightly sweet, a hint of bitter, and some spice.
