This abbey ale is a collaboration between Sierra Nevada Brewing Co. and the monks, at the Abbey of New Clairvaux. Belgian inspired golden ales are noted for their devilish personalities, but there is nothing mischievous about this complex ale. It is brilliant golden and layered with notes of summery apple and pear and pepperv spice from the use of a traditional Belgian yeast strain. A portion of proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery 1931 and planned use the stones for a castle even grander than his famous San Simeon. Although Hearst’s, plans crumbled. these historic stones will rise again in a California Cistercian abbey.

Draught. Golden pour with white head. Nose is fruity, peppery, clove and esters. Flavor is esters, banana, fruit. Very clean beer. Lively carbonation.

Pours light amber-copper with a frothy white head. Nose is a gorgeous abbey tripel, with fruit, ester, a touch of hops and spice, and a little alcohol. Flavor is leaning earthy, especially on the finish, but is clearly a Belgian tripel and a strong one at that. Finish is very sticky and long and heavy. Excellent beer.

Rated on 10-03-2015 at 800 Degrees Three Fires, Fort Wayne, IN. The appearance is a small beige head that is mostly lasting, slightly hazy body, no visible carbonation, and one ring of lacing. The aroma is yeast, fruity and spicy. The flavor i s sweet, fruity, light spice, yeast, and honey. The mouthfeel is smooth and this beer is light bodied. An easy drinking beer considering the ABV is 8.5%. This is one of my favorite beer styles, but the flavor lacked taste and character which is disappointing.

This draft brew from a restaurant poured a head of foamy finely sized white colored bubbles that were long lasting and left behind a very softly carbonated transparent orange colored body and a good lacing. The mild aroma was wheat and dough. The mild citrus mouth feel was weakly tingly at the start and at the finish. The tasty flavor contained notes of wheat hops and bread dough. An OK brew just nothing special.

12oz on tap @ Fire & Hops. Pours hazy orange with a low head. Aroma is malts with some fruits. Flavor is malts, yeast, hops and pomegranate. Nice.

750 picked up a while back... Finally got around to it tonight... This opened with a massive POP and thankfully I kept my grasp firmly on the cork... Pours with a decent lasting 3 finger head.. the brew is clear golden. Nose is a bit clovey with some light pear and apple.... a bit of a floral hoppiness as the glass warms up... Flavor mirrors the nose but the fruitiness seems like underripe produce.. a bit of a peppery note appears with warmth.. maltiness is very soft and melds seamlessly with the esters and phenols.. a bit boozy as it gets well out of fridge temperature... drink it colder. Very carbonated.. perhaps more than even its continental cousins. Good.. but very burpy... but it is going to be a bit of a chore to finish.

"Apple and pear, and a good dose of spicy yeast dominate both the aroma and flavor. Golden Belgians usually not being my cup of tea, this was quite good, and another hit for Sierra Nevada in the Ovila line. Only fault - it was overcarbonated to the point the cork shot off like a bullet, but the palate was actually quite soft and nice after a little swirling."

THOUGHTS: The cork shot off and hit the ceiling when I opened it. Not quite as intense as Duvel but it was even easier to drink. TECHNICAL: Drank 3/24/2013. Bottle. Poured a clear, medium golden yellow with a large, ever-so-slightly off-white head that kept a decent sheet and left good lacing. The aroma contained moderate light-colored bread; moderate to heavy herbal, grassy and citric hops; Moderate to heavy spicy, peppery yeast; alcohol; and light-colored fruit. The initial flavor was slightly sweet and lightly bitter and acidic; while the finish was moderately sweet and bitter, and lightly acidic with an average duration. There was pale malt, white bread, honey, light fruits, apple, pear, Asian pear, pepper and other spices. The light to medium body was somewhat dry with very fizzy carbonation and a dry and slightly alcoholic finish.

750ml bottle consumed by myself. Pours a hazed orange with an enormous white head. Aromas of clove, citrus. Taste is dry and lightly bitter. Flavors of clove, spices, yeasty esters, hot alcohol. Not quite quenching because of the alcohol heat. Finishes dry and hot. Mediocre.
