COMMERCIAL DESCRIPTION
Ovila Abbey Quad with plums is heady with aromas of caramel, rich malt, and dark fruit-balanced by the spiciness and delicate fruity notes of a traditional Belgian yeast. This beer features sugar plums grown on the grounds of the Abbey, and harvested by the monks in Vina. We hope you enjoy this collaboration ale.

Aroma: Dark fruit (plum, and dark malt); Sweet, subtle roasted malt, and solvent alcohol.
Flavor: Similar dark raisin/plum flavor; Sugar sweetness, with a little tartness in the finish, then sweeter in the aftertaste. A little caramel malt. Moderate bitterness.

375 mL bottle as Abbey Quad. Pours extremely dark red with a very off-white head. Plum, prune, cherry aroma. Dark fruit flavor (plum) with toffee. It’s quite good, but it doesn’t really do anything to stand out beyond that.

Bottle in our appartment in Maui, acquired from Wine Corner Paia, come down brew after the road to Hana! 25/04/14. Dark mahogany brown with reddish hues topped with a good sized light tan head that stays for the show. Nose is rich toffee, yeast esters, banana chews, light spice, dark berry fruit, plummy tones. Taste comprises bitter dark fruits, sweet tones, light booze, more plummy tones, leather armchair, tobacco, spice, dark berry fruits. Full bodied, fine carbonation, lightly warming alcohol in the close. Decent quad, the plums are well evident and along with the alcohol are well integrated, doesn’t get too hot.

Damn good beer. Thin head when poured into mug. Very dark with great complexity of taste. Malt, sweet at first and then a very slight sour aftertaste completes this beer. Picked this up at Joe's Craft Beer in Oxford, Ms, great store and knowledgeable staff. A Four-pack of which I wish I had a full keg. This is a great beer. You don't notice the alcohol until later. 2013 vintage. Pours no head/bubbles. Appearance - dark ruby brown. Aroma- lots of dark fruits, slight brown sugar. Not much booze. Palate- very soft, nice tight bite at end. Taste - given this is over a year, it's held up very well. Very mellow. Somewhat of a dry finish. I usually reserve my St. Bernardus chalice, gifted to me during my only visit to Brawley’s in Charlotte, NC, several years ago for special treats, of which I am hoping the Ovila Abbey Quad is one. Opens up with a light pop, as the cork is freed from the wire cage and extracted. The carbonation is light, and the beer pours very dark brown, looking like a thick cola. The smell is filled with cherry, plum, and other dark skinned fruit. There is a touch of hops upon deeper inspection of the smell. The taste has more of a brown sugar, than a dark fruit type sweetness, with sour notes becoming more noticeable mid palette, before being swept aside by the alcohol warmth. Some dark chocolate presence in the finish. If I have a fault to pick, it is the thinness of the body. It does not quite seem up to the velvet like feel of others in the style. I like the Ovila Quad for what it is, but I think the Ovila Saison is better.

Sampled out of a small bomber. Pours deep and dark with a foamy head. Quality brew that has low carbonation and you can taste the fruit deep in it. Aged really nicely.

Lightly tart fruity notes in the front, but mostly sweet caramel, with breadiness and a spicy note in the mid palate. Surprisingly dry. A bit of a winelike nose, but the taste is full on quad. Pretty good beer.
