A collaboration between Sierra Nevada Brewing Co. and the monks at the Abbey of New Clairvaux, Ovila Abbey Quad brings the centuries-old monastery brewing tradition to America. Ovila Abbey Quad is rich and complex with layers of flavor including notes of intense dark fruits, and caramel-like maltiness. Rich and complex, this ale should be shared among friends in the true spirit of the season. A portion of the proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery in 1931 and planned to use the stones for a castle even grander than his famous San Simeon. Although Hearstís plans crumbled, these historic stones will rise again in a California Cistercian abbey.

Bottle. Nice looking bottle. Pours a dark brown with little head. Huge aroma that burts with sugar plum, candy sugar, raisin,caramel, and Belgium yeast. Taste is solid. Itís what Belgium quad should taste like- complex flavors and warming alcohol. Medium heavy body. Average carbonation. Full flavored. Nice. Very nice.

On taps at Hopjackís. Dark burgundy pour. Some nice red fruit and butterscotch with heavy HEAVY belgian yeast notes. Goes a bit overboard on that belgian spice/sweetness.

Corked & Caged 750 ml Bottle. Murky dark reddish brown pour with a half-inch layer of tan foam and bubbles. Aroma of dark fruits, caramelized sugars, Belgian yeast and toffee. The flavor delivers on that promise with a healthy dose of candi sugar, caramel malt and raisin notes upfront along with some plum, grape and oak to round it out. Naturally chewy mouthfeel with moderate carbonation and a dark sugary fruit finish. Another respectable take on a classic Belgian style from the Ovila label.

Clear dark brown with copper highlights, under a thin foamy off-white head. Nose has a bright pink bubblegum note spiked with dates and dried cherries. The taste is very quad-like; boozy dark sweet malts, some raisin, Belgian yeasty eccentricity, some bubblegum and an almost cloying yeast tone on the finish. Not as much plum and cherry but more bubblegum and malty maloasses-ish tones. Sweet and nice, but not "Belgian" enough.

Pours a cola brown with a short light tan head. Cherry fruit roll up and grape nose. Full but lifeless moutfheel. Cherry lifesaver overarching some toffee. Meh.

750mL, corked and caged, 333th rating for this brew. Nose sweetly malty and lightly yeasty, just tons of stone fruit, swirling eddies of heavy plum with lighter peach, over sturdy base toffee and red berry, even some faint earth and smoke. Pours deep dark brown, almost black, with some ruby before the volume accumulates, and a creamy pale tan head. Taste is sweet with light tang, heavy berry, strong but seductive and pleasantly soft warmth in the throat and chest, heavy plum, faint earth and toffee, with a nice yeasty resolution. Itís obviously very big but the alcohol is handled masterfully here, and the big picture is clean, fresh, and well-executed. Very low bitterness, but the subtle hop spices emerge in the mid-body and maintain their grip. Soft vanilla and wheat character, medium but appreciable ester and phenol development, smooth medium-full body. There will inevitably be some sniping from the peanut gallery about supposed American boorishness here, but I canít come close to agreeing; this is clearly the stroke of a master, and one to hold up against more established examples (though Iíd gladly take a dash more Special B per bottle!).

Bottle from Ale Yeah! Pours black, with a small, beige head. Aromas of dates, chocolate, cinnamon, cloves, and toffee. Very sweet, with a lot of savory spices. Heavy body, sticky, and slightly warming. Overall, this is a pretty good attempt at an American Quad, but still lacking the complexity and balance Iíd expect.

Poured as a taster at local shop. Pours a rich clear brown with reddish hints and very little head. Aroma - grape, raisin, toffee, and subtle alcohol. Taste is a bit boozy, brown sugar, cherry, vanilla, and malt. It is thick and oily on the palate and has a nice long lasting finish.
