COMMERCIAL DESCRIPTION
A collaboration between Sierra Nevada Brewing Co. and the monks at the Abbey of New Clairvaux, Ovila Abbey Quad brings the centuries-old monastery brewing tradition to America. Ovila Abbey Quad is rich and complex with layers of flavor including notes of intense dark fruits, and caramel-like maltiness. Rich and complex, this ale should be shared among friends in the true spirit of the season. A portion of the proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery in 1931 and planned to use the stones for a castle even grander than his famous San Simeon. Although Hearst’s plans crumbled, these historic stones will rise again in a California Cistercian abbey.

Draft. Aroma is caramel, candy, like an artificially flavored jolly rancher. Dark fruit. Baking spices. Dark mahogany color, tan head that dissipates into a ring within a minute. No lacing. Taste: lightly sweet, almost no bitterness. Some vinegar in the finish. Not picking up much additional complexity. Palate: soft carb, medium-light body. P: Pours a vivacious nut brown with a taupe crown of froth that fades to a creamy film in top. Sloppy lacing grabbing for the sides. S: Dark sugar malt, brown sugar, rich caramel, booze, the inside of an old leather boot, rye bread, plums, figs, prunes and a subtle spices. T/M: Lots of rich dark malt, aged oak, apples, spiced rum soaked dark fruits, candied pecans, roasted caramel and earthy bitterness. Earthy and spicy hops round out the dry roasty finish. Hints of coffee in the midst of the bready belgian yeast. Full bodied with a prickly bite. Nice warming. O: A spicy and rich quad that has multiple layers of flavors that keeps your palate guessing. I really enjoyed this because of the balance it achieved. I have enjoyed all the Ovila brews so far. Cheers!

on tap at the house de 1000. very dark brown. bareky any co2. simple clean aroma. no volatile effects. no way this is over 10%. its too mild. goes down way too easy. nice head. a tad tart, unsurprizingly. i could get to like this beer. good example of a well behaved and refined quad. its almost from the old country but possibly better. has manners. yes, that tartness is barely perceivable but its there and makes itself known. mild tart sour backbone. one of the best quads I’ve effer tasted. you go oolivia girl.

Pint at Woodlands Tavern on 5/1/13. Dark reddish brown pour with a thin beige head. Malty and phenolic nose with notes of banana, caramel, cherry and paint thinner. Caramel malt flavor with banana, cherry and some booziness before a dank finish.

I thought this was a very good beer. Very rich in flavor with a dark fruit undertone and a spice/caramel overtone.

Generally, I am not a huge fan of Belgian Ales and much prefer IPAs. However, this was really good. Noticeable Belgian yeasts with dark fruits with a strong plum flavor. Nice carbonation and minimal head.

tap at Dash In back in March - Pours dark amber and has a pleasant aroma of dark fruit and bready malt. It tastes very sweet with plum character and some alcohol. This full bodied brew has a sweet finish with some lingering alcohol. It’s good though not a great quad that would challenge something like Rochefort.

12 ounce bottle from Decicco Ardsley. Rish dark brown with tan head and lace. Aroma of caramel wood raisins licorice old furniture. Rich burnt caramel fig rich fruity sweetness with medium tobacco bitter finish with some ash and licorice and herbal hops or nutmeg or something. Very complex and full bodied. Excellent.

A very nice quad. Pours a dark maroon/black, a little muddy. Smells awesome, some fruit, black cherries, and even some wine. Taste is similar, a little boozy. Quite good however. Had at Downtown Joes. ---Rated via Beer Buddy for iPhone
