COMMERCIAL DESCRIPTION
A collaboration between Sierra Nevada Brewing Co. and the monks at the Abbey of New Clairvaux, Ovila Abbey Quad brings the centuries-old monastery brewing tradition to America. Ovila Abbey Quad is rich and complex with layers of flavor including notes of intense dark fruits, and caramel-like maltiness. Rich and complex, this ale should be shared among friends in the true spirit of the season. A portion of the proceeds from this ale goes toward the restoration of the historic Santa Maria de Ovila chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery in 1931 and planned to use the stones for a castle even grander than his famous San Simeon. Although Hearst’s plans crumbled, these historic stones will rise again in a California Cistercian abbey.

By far one of my favorite beers. Great all around taste and the flavor hits you just right. I could sip on this all day and be quite a happy camper.

This beer has so many layers to it I do not know where to begin. It is mysteriously dark, has notes of caramel, figs, and various dark enchanting fruits.

Glassware: Chimay chalice... Occasion: celebrating the end of school year number thirteen! Appearance: dark mahogany body with a zesty, retreating head that thins to a mist... Aroma: fruity, cherry/sherry and pleasant esters mix together to seduce a sip.... Palate: thick, full-bodied, warming rush that impales the teeth--a visceral experience... Taste: again, cherry and oken flavors--"Rich and complex" is repeated on the label, so it must be true, coming from an abbey... Overall: as clean a high as one can derive from a beer--fulfills the expectations with a thick, powerful experience...bought this in December and shelved it for a special occasion...

750 cc from Frank Smith’s. Pours turbid burnt umber toward blackish with 1-finger khaki head. Nose is dark fruit, funky yeasty rock sugary malt, mild banana, muscat grapes. Tastes malty, dark fruity, with a yeasty rock sugary malt, funky notes, cherry and blackberry, and an earthy, nutty finish. Low on carbonation, and very complex with well hidden alcohol. This one is outstanding.

Comes out of the tap a rich, opaque dark chocolate brown with a fine-bubbled tan head. Strong aroma fills the nose with fruity, chocolate and caramel notes. Flavor has firm tones of chocolate, apple, banana and caramel plus a hint of toffee. Full-bodied texture is smooth as almond milk and fairly tingly, leaving a lip-smacking fizzy, fruity, slightly candy-bar finish. What a great way to raise money for a good cause!

Dark brown. Black currant and some prune flavors along with maltiness on the full bodied palate. Hoppiness adds a bright dimension as well. Absolutely fantastic!

THOUGHTS: Yum. Very tasty. You could hear the fizz as it was being poured. Rather Belgian. Hid alcohol well. Very easy to drink. It started to become a little cloying by the end, but only slightly. TECHNICAL: Bottle. Poured a very dark rad that was nearly black in the glass with a small to average, off-white head that mostly lasted and left fair lacing. The aroma had moderate to heavy caramel, chocolate, candy sugar and chocolate syrup; moderate spicy yeast; raisin, plum, prune fig, toffee and brown sugar. The initial flavor was moderately sweet, slightly sour and lightly acidic; while the finish was heavily sweet, lightly sour, lightly acidic and slightly bitter with an average to long duration. There was caramel, toffee, slight chocolate syrupy, black cherry, prune, raisin, plum, molasses, port wine, spicy yeast, brown sugar, candy sugar, hints of vanilla, a little citrus, and a little dark chocolate. The medium body was creamy and then dry with soft and then quite fizzy carbonation and a lightly alcoholic finish.

A little bit too cold at first, but this warms up nicely. Not as sticky sweet as the double, this is quite good. A very easy strength, little to no alcohol notes. Some brown sugar and chewiness. Good. Raisins in the aroma.
