An homage to the monkís noble work, this unique farmhouse ale is incredibly complex with notes of lemon, pepper, straw and herbs balanced by the tang of Mandarin oranges and a spicy kick of pepper. The Mandarin oranges used to make this beer were locally grown, including a portion grown on the grounds of the Abbey of New Clairvaux and picked by hand by the community of monks living there. We hope you enjoy this collaboration ale.

12.7 ounce caged and corked bottle. Served in a tulip, the beer pours an amber/orange color with an inch white head. Head retention and lacing are both good. The brew smells like peppercorns, bready malt, oranges, peaches, sweet spices, and some wheat/bready malt. I think the taste is just like the aroma. However, I think the peppery spice and wheat flavors are the strongest. Mouthfeel/body is medium, itís a bit slick and creamy, and is also well carbonated. I think itís a solid overall brew. $12.99 a 4-pack.

375 ml bottle via local trade. Pours a mostly clear tea color with a small off-white head that immediately settles into a ring with some light wisps of film. Aroma of caramel malts, leaves, mandarin oranges, minor spice, rye toast, and some wet cardboard. Flavor of mandarin, pepper, rye, lemon, tea, toffee, and sweet malts. Light-medium bodied, with moderate carbonation that becomes sneakily crisp in the middle and finishes smooth and dry. Lingering malt sweetness. Really odd. My least favorite of the overall excellent Ovila lineup so far, but not bad.

On tap at Coleís. Cloudy peach coloured with a minimal head. Medium mouthfeel. Peachy taste throughout, with tangerine flavour building up through the pint. Some pepper in the finish. Better as it warms.

tap at Dash In - This draft brew has an aroma of spices, citrus, and yeast. Itís bubbly with that distinctive herbal, fruity saison flavor profile and a very good one at that. Itís medium to full bodied and is sweet with a slightly dry finish.

Sweet and citrus are the headliners in this complex aroma heavy saison. I couldn't put my finger on the appropriate "meaty-protein" flavor that is accompanying this buttery wave of amber. (Been vegetarian too long) It is both alarming and pleasant. The pepper finish is a great call by these clearly talented brew masters. ---Rated via Beer Buddy for iPhone

Bottle [12.7oz]. Pours a deep orange-amber with a small lasting frothy off-white head. Aroma of Belgian yeast, fruit, honey, light pepper, other spices and caramel malt. Nice flavour, sweet, yeasty and fruity, along with spices, a touch of alcohol, caramel malt and a long-ish dry, spicy finish. Medium bodied, good carbonation. GBBF Day 1. Light haze on this gold beer. Small bubbly white head. Smooth palate, slightly soft. Sweet saison yeast, dry. Mild spice. Not really getting that much fruit. Dry finish with more spice. Itís fine.

Cask gravity at GBBF 2013. It pours pale golden with a small white head. The nose is peppery, dough, pear, melon, cereal, underlying sweetness, spice and bread. The taste is sweet dough, tangerine, orange, light spice, earth, toast, touch of alcohol and white grape skin with a dry finish. Medium body, light carbonation and slightly oily mouth-feel. Decent.

Bottle from The Liquor Collection, Honolulu, August 2013. Hazy copper with a small white head. Aroma and taste of orange, spices, malt, toffee and yeast. The mouthfeel was thick. Some warming alcohol in the long finish. A nice one to sip in the balcony at the hotel room in Waikiki.

Draft pour at the Apothecary in Morgantown. Pours a hazy copper with a white head of foam. The aroma has some peppercorn and yeasty estery notes. Tastes sweet and eatery. Canít get much of the mandarin oranges, unfortunately.
