COMMERCIAL DESCRIPTION
A collaboration between Sierra Nevada Brewing Co and the monks at the Abbey of New Clairvaux, Ovila Abbey Saison brings the centuries-old monastery brewing tradition to America. Ovila Abbey Saison is complex and contemplative-but also refreshingly dry and drinkable. With earthy and spicy aromas, this rustic Saison has note of green grass and a faint citrus tang. The body is light and layered with fruit and spice accents and a dry, peppery finish. A portion of the proceedsfrom this ale go toward the restoration of the historic Santa Maria de Oliva chapter house on the grounds of the Abbey of New Clairvaux. This medieval building stood for nearly eight centuries in Spain. William Randolph Hearst purchased the monastery in 1931 and planned to use the stones for a castle even grander than his famous San Simeon. Although Hearst’s plan crumbled, these historic stones will rise again in a California Cistercian abbey.

750ml bottle 6/18/13 (Binny’s Naperville)-42° in Tulip=Pours a cloudy yellowish orange with a big fluffy white head. Aroma of spices, citrus, pepper, and yeast. Taste of the same with more spices and pepper. This light bodied brew is very well balanced and is quite tasty. Great job.

Bottle into a fluted glass. Pours deep amber with a thick finger of white head. Aroma of pepper, bubblegum, white bread. Taste is overly sweet, a bit of cotton candy, bubblegum, some pepper and bready yeast.

Aroma: Citrus, malt and a marzipan. Appearance: Amber/copper with a thin white head. Flavor: Orange, caramel, nuts, earth and alcohol. Palate: Medium bodied, moderate to high carbonation Overall: Enjoyable, complex, rich and nicely balanced.

Bottle. Pours a clear amber color with a moderate off-white head on it. Nose definitely has some of that saison funk to it - yeasty and slightly sour that definitely conjures up images of the farmhouse. Taste is decently sour without any residual sweetness. Feel is a bit thick and slightly heavy.

On Tap. Pours a hazy golden orange, ample head. Aroma is an earthy and spicy mix. Taste ripe fruit and citrus mix, grassy and spicy as well. Nice blend of flavors, complex. Dry, slight pepper finish.

Split this one with Hopswagger. Half of a 750 ml bottle poured into a Duvel Tulip glass. A - Pours a hazy golden orange with 1.5 fingers of white head. S - Floral hops, lemon and orange citrus, dry chalky yeast, orchard pears, apples, and bright stone fruit. Straw dust, there’s a musty but clean damp basement aroma going on. T - Orchard fruit-pears, apples skins, stone fruit, tangerines, earthy grass, wood, spicy musty yeast, the sweet pale malt quickly dries out on the finish. M - Soft effervescent carbonation, medium bodied, dries out on the finish. This was better than I expected. All the flavors played their part. It was fruity, musty, and dry. This is worth seeking out. Wish I had another bottle. Serving type: bottle 03-10-2012

Aroma is yeast, dry spices/black pepper and a hint of sweetness. The flavor is spices, Belgian yeast, mild/medium sweetness, a hint of orange/orange juice and a sour/tangy finish.

750 mL bottle. Pours orange, with a big, pillowy, off-white head. Apricots and apples up front, with some notes of herbs, biscuits, and black pepper. The flavor is very sweet and citrusy, with a very faint sourness in the finish. Light to medium body, dry, and lightly astringent. Overall, this is a good, refreshing, and tasty saison. It lacks some of the complexity I’ve come to expect, but still, not bad.
