COMMERCIAL DESCRIPTION
Cyril Fonchy, brewer : For my first batch as a pro, I wanted to create a beer which resemble me, but could also please everybody. As a gourmet chef, I have been looking for original raw materials. I played on texture and aromas for this Imperial Stout. My aim was to obtain a creamy product with a rather light level of alcohol. Without pretention, I first wanted to prove to the beer world that we can play with texture and aromas without raising the level of alcohol. To do so, I realized a beer using specific malts and I decided to associate with an original hopping of the Japanese Sorachi Ace. And I’m not done! It is subtly balanced by an infusion of vanilla sticks I deliberately aged in bourbon whiskey".

Als erstes schießt das Bier aus der Flasche, schade 1/3 des Bieres sind hinüber! Trottz 2 Monate langer Lagerung. Geruch röstmalzig schokolodig milchig süß, minimal alkoholisch. Geschmack mild schokoladig mit viel CO2, dazu röstmalzig, Kaffee.

18.11.13 Bottled 330ml Saveur. A bit gushing bottle - not too much. Dark opaque black color, good beige-brown head. Aroma has cocoa, toasted malts, vanilla, sweet bourbon and caramel. Medium to full bodied, active carbonation. Sweetish bourbon flavors over the cocoa toasted maltyness. Some lingering whisky-like alcohol in the finish. Interesting. Maybe less yeast to get less carbonation and bottle conditioning? Otherwise quite nice French beer.

Bottle@Home. Black currant, coffee and cola aroma. Black, huge light brown head, good lace. Sweet, chocolate but mainly coffee, roasted, some black currant. Medium full and dry.

Bottle 330ml.

Sparkling - and dark brown colour with a large, frothy and speaking, good lacing, mostly diminishing, beige head. Aroma is moderate to heavy malty, roasted, burnt, chocolate. Flavour is moderate to heavy sweet and bitter with a long duration, sharp, roasted, chocolate, earthy notes. Body is medium, texture is oily, carbonation is fizzy - soft. [20131011]

Bottle @ fonefan tasting. Unclear very dark brown with a brown head. Aroma is sweet, roasted malt, chocolate and notes of vanilla. Flavor is quite sweet and rather bitter. Dry and rather bitter finish. High carbonation. 111013

33 cL bottle. Pours hazy brown with a small tan head. Aroma is toasted malty, caramelish and light bourbon. Vanilla, toasted chocolate malty. Solid bitterness. Too carbonated. Bitter, toasted malty and light chocolate. Smooth, solid bitter and dark malty beer, too carbonated.

Bottle 33 cl, BBE 10/2013. Pours black in color with a foamy tan head. Licorice, roasted coffee and dark chocolate in aroma. Nice, very intense roasted notes. Sweet chocolate and roasted coffee beans in taste. Slightly bitter notes as well.
