COMMERCIAL DESCRIPTION
Patiemment au froid depuis plus de 14 mois, nous l’avons laissé atteindre sa maturité en laissant le temps aux saveurs de fraterniser et de former un ensemble puissamment harmonieux. D’une personnalité hybride bière/tawny/cognac, la S offre une palette de saveurs illimitées; fruits confits, cerises, dattes, caramels, le tout présenté avec équilibre et chaleur. Une gâterie à partager avec l’être cher.

Note from the brewer: this is not made to be an American Strong Ale or anything else. It’s made to be a kind of barley-based port-like brew with very little carbonation, just enough to protect it against oxydation.

My 4600th rating! Bottle [500ml] courtesy of Glouglouburp. Pours a very dark brown, almost black, with an average size quick-diminishing fizzy off-white head. Nice aroma of roasted malt, alcohol, dark fruit, brown sugar, chocolate, some sourness, wood, light smoke and more. Smooth (for the abv) flavour of roasted malt, chocolate, slightly sour dark fruit, wood, light brown sugar and caramel. Alcohol is there in the aroma but it’s pretty well hidden in the flavour. Average to medium bodied, slightly sticky mouthfeel. It’s quite good, with lots going on, but it’a not as good as I expected.

Bouteille 500ml. De couleur brune foncée et voilée. Nez fruité (prunes confites, figues, cerises, notes de raisins vineux), malté de caramel toffee aux notes rôties, léger de chocolat noir et de fumée de bois avec des notes d’alcool ainsi que des traces de café. Moyennement ronde en bouche avec un pétillement moyen-bas et une texture aux notes liquoreuses. Goût fruité sucré et aux faibles notes sûres (cerises, moyen de prunes, notes de figues et de raisins aux notes vineuses) accompagné d’un goût d’un léger goût de malt fumé (fumée de bois, traces de viande fumée) lors de l’entrée en bouche auquel se rajoute un goût malté de caramel sucré et légèrement rôti avec des traces de chocolat et de gâteau forêt noire. Parallèlement, l’on retrouve un très léger goût d’alcool réchauffant en arrière goût jusqu’en finale, où l’on retrouve également de faibles traces de sucre brûlé. Post-goût long, légèrement amer et un peu réchauffant d’alcool, de fruits (moût de cerises et de raisins) avec des traces de chocolat.

Deep mahogany in colour with a thin but lasting tan head, light lacing. The aroma is of chocolate, cherries, smoke, raisins and plums. The flavour is not nearly as sweet as I was expecting, quite a bit of chocolate covered cherries in this, some light alcohol warmth, malty, some wood and liquorice. Sweet and warming mouthfeel, medium body, mild carbonation. Finishes long, sweet, warming.

Um, this was a ton better then expected. The alcohol is fairly well hidden and it is very drinkable.

Aroma sweet front with fruity elements. Mellow character behind. Drier finish.
Appearance dark brown going into black. Base creamy with mid top. 4-
Flavor and Palate : medium bodied. Mineral with slight metallic hints. Mild sweet berry mid. Some following tartness. Mellow finish. Good.

Pours dark unclear coffee brown in color with a mall but present beige head. The aroma is lighter bringing notes of sweet caramel boozy malts and brown sugar. The flavor is my favorite part, bringing soft tart cherries, and on almost like the body of a lighter Flemish sour red.

Pours a dark brown with little carbonation that quickly disappears. Aroma is fruity, sweet malt and loads of alcohol. Taste is sharp alcohol, sweet fruity almost portlike. Easy sipper, this one is going to kick you in the ass.

UPDATED: JUL 4, 2012 Bouteille 500ml. Couleur noire ne laissant pas passer la lumière, peu de mousse couleur café au lait. Un peu sirupeuse en bouche. Arôme de fruits confits, de mélasse, un peu de vanille, d’alcool. Goût de fruits confits, de cognac, de vanille et de café. Effervescence presque absente. Malgré un taux d’alcool de 11,9%, on ne le sent pas, étant bien camouflé. Excellente.

500 ml. from St. Hubert. Sour fruit, overall not too sour because of the malting, also smoke and peat . Lacey, with a spore looking head on a brown body. A strong brown meets a scotch meets a fruit beer. Fruit in the finish: cherries, dates, caramel. Fairly full bodied.

Bottle 500 ml. Brown with a small light brown head and no lacing. Aroma of caramel with slight cherries, porto and wood notes. Taste is dark fruits, caramel and porto notes. Slight acidic. Mouthfeel is vinous. Warming alcohol but not overwhelming. Good complexity but lack of balance. Way too sugary to drink it alone.
