COMMERCIAL DESCRIPTION
Patiemment au froid depuis plus de 14 mois, nous l’avons laissé atteindre sa maturité en laissant le temps aux saveurs de fraterniser et de former un ensemble puissamment harmonieux. D’une personnalité hybride bière/tawny/cognac, la S offre une palette de saveurs illimitées; fruits confits, cerises, dattes, caramels, le tout présenté avec équilibre et chaleur. Une gâterie à partager avec l’être cher.

Note from the brewer: this is not made to be an American Strong Ale or anything else. It’s made to be a kind of barley-based port-like brew with very little carbonation, just enough to protect it against oxydation.

My Bottom Line:
Cherries, black grapes and figs uplift this sipper’s chocolate and wooden smoke, sculpting a refined, balanced expérience.

Further Personal Perceptions:
-A ring of foam circles the purple-laced dark brown.
-The finish is rather short and forgettable.
-Carbonation makes this easy to drink despite the potency.
-Alcohol is very well hidden.
-This is not as sweet as expected.

Bière couleur de mélasse, mais parfaitement limpide et coiffée d’un fin col moka traçant une belle dentelle au verre. Des arômes capiteux et boisés de cerises confites, de caramel roux et de raisins secs. Moyennement amère avec un sucre notable. Elle est veloutée, légèrement effervescente et de corps vraiment solide. Elle laisse en bouche de somptueux arômes et une douce amertume.

Lovely big beer. Up front very malty, caramel maybe chocolate or coffee, and roasty. In the middle more dark fruit, like figs, plums and some tangy bits like cherries. Finish is very sweet. Very creamy in the mouth with medium to low carbonation. Pours a very dark, coffee-like. Good stuff!

(Une bouteille de 50 cl partagée avec rodenbach99) Un liquide à la robe profondément brune. Un anneau de mousse. Des arômes chocolatés qui se marient à des cerises chaudes et à une fumée qui transporte d’étranges notes teintées par les huîtres. Des saveurs qui sont aussi bien marquées par des notes poissonneuses qui étranglent, malheureusement, la base maltée. Des fruits surets qui réussissent tout de même à se signaler. Un alcool qui enrobe. Une bouche, étonnamment, qui n’est pas très dense. Un pétillement qui me semble modéré. Une texture plutôt mince. Une finale marquée par le retour de notes fumées et marines.

Bouteille de 500ml swing-top. Une espèce de cola sans mousse. Le nez est fumé avec des dattes et des raisins secs. Il est vineux. La bouche est fumée, acide, vinaigré. Elle goûte le nuoc nam. Elle est mince. Est-ce que ce produit serait contaminé où simplement raté ? Dommage car la bouteille est très belle.

My 2000th rating! Kindly shared by HogTownHarry and drank with him. Appearance: Pitch black, brown leather tan head. Aroma: Malty, lots of coffee and figs, raisins, plums, leather and wood. Flavour: Initially quite malty but soon making way to figs and raisins, cherry, quite tangy and a little sour, alcohol is present but certainly not overpowering, red wine and port notes with a definite wood flavour, very warming, glad to have shared this as I reckon a bottle would take an age to drink. A hint of molasses in the finish with a lingering cherry finish. Thanks to Harry for sharing, Paul for suggesting it and both of them for all of their generosity along with the rest of the Toronto crew. x x x

500ml swing-top bottle shared with garthicus for his 2000th rating. Thin looking ruby-black with an average diminishing head. Smells fruity, oily, roasty, with hints of fruitcake, molasses and alcohol. Taste follows, but sweeter. Slightly thin body, a bit boozy, quite sticky .... I liked it, but tgis would never be a "pint please!" brew for me.

500ml bottle. Very dark brown pour, small white head. Interesting aroma, quite smoky, roasted malt, cognac, dark dark boozy fruit, fresh ground pepper, nuts, and caramel. Carb is low but expected, and enjoyable, slick mouthfeel. The malt really comes forward with the pepper, and dark fruit in the end. The finish is medium bittersweet, with a solid roasted maltiness, and touches of smoke. Incredibly complex beer, make sure to share this one.

Brown bottle, 500 ml, purchased at Le dépanneur de la rive on December 28 2011, savoured January 26 2012; eye: mahogany with purplish hue, clear, no effervescence, tiny sheet of beige head that turns into a tiny rig, light lacing; nose: star anise, malt, light alcohol, caramel, slight woody, slight fruity; mouth: star anise, malt, light alcohol, caramel, slight woody, slight fruity, alcohol warmth, finale in star anise, medium body, good carbonation, lightly sweet, velvety texture; overall: interesting FRANÇAIS Bouteille brune, 500 ml, achetée chez Le dépanneur de la rive le 28 décembre 2011, savourée le 26 janvier 2012; œil : acajou avec une teinte violacée, limpide, pas d’effervescence, petite couverture de mousse beige qui se transforme en un petit anneau, légère dentelle nez : anis étoilé, malt, léger alcool, caramel, très léger boisé, très léger fruité bouche : anis étoilé, malt, léger alcool, caramel, très léger boisé, très léger fruité, finale en anis étoilé, corps moyen, bonne carbonatation, légèrement sucrée, texture veloutée en résumé : intéressante

500 ml bottle. Pours a dark brown with an orange tint. Dark beige head disappears after a few seconds. Smells of burnt caramel. Taste is very fruity, cherries, figs, dates, very little bitterness. Alcohol is felt very clearly as it goes down. Body is average to strong, texture is very sticky. Excellent beer, yet I’d recommend sharing the bottle, it gets quite heavy after a while.
