COMMERCIAL DESCRIPTION
The Brunswick Mum was a German ale brewed at a high gravity for export. In German it’s known as the Braunschweiger Mumme, with the second word pronounced moom-meh. In a cultural compromise, we’ve taken to calling our version the Brunswick Mumme. For the Mad Scientist Series #18, we brewed a thick German ale with the same spirit. Test batches contained birch bark, prune juice and thyme, but after much experimentation, the brewers crafted a recipe with cardamom pods and juniper for spicing. Because of earlier experimentation, we know that a late addition of Simcoe hops compliments and approximates the bright aroma of fresh spruce tips, so we made that another key component of our Mumme. Between a four hour boil, beans and oats in the mash, and ancient spicing, the Sixpoint Mumme certainly resembles its Braunschweig predecessor.Our beer does differ from the ancient recipe in a few ways. Per health regulations, there were no raw eggs added. And our beer only aged for a few months. We also more fully attenuated our brew in primary fermentation—this ancient beer would have relied on secondary fermentation in the cask from bacteria on herbs and in the wood. As head brewer Pete Dickson noted, this beer would probably have soured a bit while in the barrel for over two years—after experimentation he speculates that he could craft a slightly soured mumme that would have historical roots, and be quite tasty to boot. That’s a big part of the spirit of Mad Science… gaining knowledge through hypotheses and experimentation. Our beer has juniper and cardamom on the nose, laid atop a strong amber ale. On tap at World of Beer Easton on 7/28/14. Clear amber to copper pour with a thin off-white head. Aroma of spice, pine and sweet malt. Sweet malt and spice flavor with some pine before a smoky, band-aidy finish.

Snifter at the original Small Bar in Logan Square. Color is dark and thick amber, cannot see through the beer. Nice thick lasting head. The beer is all sorts of sweet - fruity sweet, sugar sweet, thick biscuit sweet. On top of that the spices are strong cardamom, not much on juniper. So its sweet and super spiced but not enough to cut through the sweetness. No, not that much for me. I get the idea they wanted but hard to drink.

Draft at Dutch’s. Pours a hazy dark golden color with a medium sized off white head. The aroma and flavor have a strong pine and juniper character. Some sweet malts, mild cardamom spice, easy drinking. The combo of the herbs and spices mask the abv nicely. I enjoy brews that are all about experimenting and this fits the bill. Interesting brew.

On tap at Dutch’s. Pours a hazy, sort of darker, vibrant orange amber color. Thin off-white head, leaves good bits of lace. Tons of pine and juniper up front.. Very big flavor to this. Juniper rests for a bit on the back of the palate long after each sip. Some lightly spicy taste in the finish, what I assume is cardamom. Very interesting, big, flavorful and complex beer... One of the most potent and assertive I’ve had from the Mad Scientist series. Kind of odd, and almost off-putting at first, but the more I think about it the more I’m fascinated by it... Get a bit of the thyme now that I’m looking for it, but I don’t think I’d have picked that out amidst everything else here on my own. A bit of caramel malt, light toffee, caramelized sugars... Moderate sweet taste, moderate bitter, light alcohol bite, and just a bit of sourness. Seeing some of the oats. Bigger body. Lightly sticky, then a bit drying in the finish. Smooth, lighter carbonation. Really strange, super-interesting beer... One of the most complex and fascinating brews I’ve tried in a while. Thank you, Sixpoint, for going into detail with this one in your description... There’s a lot to contemplate on, with this one.

9.8 percent alcohol*On tap at Barcade, pours hazy golden orange with light head and lace. Aromas and flavor are cinnamon, shaving cream, sugar, malt, and perfume musk. Really weird. Taste is same as aroma with too much heat.

Draft. Poured hazy dark copper color with average white fizzy head that mostly lasted with good lacing. Moderate roasted grainy, bubblegum and resin aroma. Medium to abundant body with a smooth texture and soft carbonation. Medium to heavy toasted sweet flavor with a medium roasted sweet finish of moderate duration. Very interesting brew.

Draft to taster. Abv is listed as 9.8%. Looks solid; a lightly hazy golden orange with foamy off-white head that steadily dissipates into lacing. Smells of spices with a mildly sweet backbone. Tastes like it smells, only better, and with a bit of pit fruit too. Solid on the palate. Interesting, and not in a bad way.

On tap in sampler: Pours hazy amber with a decent offwhite head. Aroma is malty, piney, bubblegum, and a little funky. Taste is surprisingly hoppy, but also very sweet. Full body, a little cloying, but a decent beer.
