clear amber, whispy head, strands of lace, sweet caramal and pine aroma, big bitter hop flavor, touch of caramel sweetness comes in and tries to balance but falls short, tasty but the bitterness gets old

Cask... Hazy golden ale with a very small, creamy, white head. Lots of floaties. Big earthy, fruity, Simcoe® nose with notes of damp leather, pine, cat piss, toffee and a rumor of peach or apricot. The solid malt backbone is snapped like a twig by the mammoth Simcoe® hops. No contest... and the malt has been in training. It’s not wimpy malt, but the hops just kick the living shit out of it. TKO in the first round. Heavily bitter (to my tender palate anyway), but not unpleasantly so. Undercurrent of caramel or toffee. Full-bodied with a creamy mouthfeel and light carbonation. Lengthy, very bitter, very dry finish. Great IPA!

On tap at the Drafting Room. Poured a Medium to dark amber color with a smaller off white head. Piney, hoppy aroma and tastes. Some spices and some floral aspects as well. This one was fantastic - this is why IPAs is one of my favorite beers!

Another great IPA from the 2004 IPA Project. I’ve been fortunate enough to have them all, and I can’t wait for December 10th. We should get a shindig together that night. This one pours coppery, with a nice head. Aroma of strong hops, pine, resin, florals, and spice. Tastes hoppy, with some citrus and an almost piney, syrupy, resinous finish. This one is great.

Hand-bottle courtesy of Dickinsonbeer, sampled in November 2006: Pours a transparent copper amber with a thin-lacing white head. Aroma has some sweet toasty caramel malt and peppery grapefruity hops. Body starts with a sweet caramel maltiness and good bittersweet peppery grapefruity hoppy balance. A nice IPA.

Special gift from Eric and served in my GI IPA glass: Pours a beautiful coppery golden sunset hue topped by a small but lasting frothy head and left okay lace in it’s awake. The nose detects SIMCOE in all of it’s glory of pure pine resin, pink grapefruit, crab apple, white pepper, a touch of clove and mint supported by carmelized and biscuity malt and even a dash of beet sugar.
The taste profile starts very hoppy making me happy with citric, acidic and hop spice characteristics at the forefront. Nicely balanced by sweeter malts and a some sugary component. The finish is dry, ashy and astringent but not so much to take away from the flava flav. The mouth feel is mildly aggressive and sharp around the edge and smooth in the midesection with a very long mineral bitter aftertaste.
I love these single hopped IPA to show you what the hop is all about, this is no exception. Digging the Simcoe, oh so yummy to my tummy. Mucho THX, now the brewer can get off your ass.

Bottled from Growler in a tiny ass bottle
Low carbonation, very light head. The aroma is piney with earthy hop notes, very yeasty like unfiltered primary wort; catty. The flavor is very balanced with a malty body & herbal sweetness. Finishes dry, smooth. I really wanted to try more of this one.

Poured a copper color with a small off white head. Sweet, piney, and citrus hop aroma. Nice bitter hops, light malts, the bitter citrus really stands out here. Nearly reminded me of the Cascade IPA, but it just fell short by a little. Beautiful.

UPDATED: SEP 20, 2006 This just proves that my favorite single hop is simcoe. Nothing comes close- not even amarillo. Every beer that I have had that used this hop was excellent. Skewed heavily toward grapefruit. If you think about grapefruit juice when you drink this it becomes even more aparent. A very bold IPA with a very clean finish with excellent bittering quality.

UPDATED: JUL 24, 2004 Draught at the brewery: Smelled piney, hoppy, bitter, and a little citrusy. Apearance was dark amber color. Clear. Nice off white head which dissipated. Good lacing. Flavor was bitter piney hops. Strong, fresh, crisp flavor. Very tasty. A bit like the Cascade, but more pine. Very easy to drink. Could hardly stop myself. Overall, my favorite Anniversary IPA yet.
