Commercial Description:
Our semi-sweet mead which, this year, features metaphome honey fermented with champagne yeast and well water. The delicate flavor of this unique honey produces quite a different "traditional mead".

Bottle tried @ the RB cleveland gathering 3/10/07...From my RB Secret Santa like 2 years ago...Thank you Brian! Light amber color, brilliant clarity. Honey dominant flavor... go figure! Light alcohol and a pleasant floral aroma follows with maybe some apple notes. Well balanced, semi sweet finish. Very sweet up front, but acidity cuts sweetness nicely. Honey floral flavored throughout. Thinner medium body, warming alcohol, and seemingly still. This is one of the few meads commercially that I’ve had, but it’s defnitely the best by far! Starts sweet, but dries out in the finish to beg for more on the palate. Very highly enjoyable was the sentiment of the group!

Polished yellow gold. Beautifully integrated, lightly floral nose with rich honeycomb, tart apple skins, white grapes, and cane sugar. Elegantly toasty with fusel alcohol residing beneath the sweetness. Extremely delicate sparkle on the palate. Silky and crunchy. Tightly woven flavors of toasty champagne and rich honey. Immensely quaffable with an indelible tart apple skin/white grape impression meshed with staunch honey richness and cutting alcohol. Substantial tannic acidity. Minimally floral, though, which causes the sweetness to sporadically flare up. Rather harsh on the swallow, with a surge of chest-warming fusel alcohol, rich green raisins, and grainy cane sugar assertively coming through. It starts promising, and the aroma and mouthfeel are superb, but the alcohol becomes very distracting by the end. Serving this chilled, rather than cool, helps to suppress the alcohol. Thx, Kinz!

Pretty golden color, nice legs in the glass. Aroma is of honey (duh), sweet with just a faint note of smoke. Flavor is again of honey, with a nice grapey note running through it, almost like a Welch's white grape juice. Tiniest whiff of smoke on the finish. The taste just lingers in your mouth. Nice, nice stuff. Really need to check out some other meads to see if this stuff measures up as well as I think it will.
