Commercial Description:
For our hopping regime we went with Cascade and Nuggets in the boiling addition. Centennials were added every 5 minutes for the last 30 minutes of the boil. We added Crystals into the whirlpool. Dry hopping was done in both the fermentor after primary fermentation and the bright tank. We used a mixture of Chinook, Nuggets, and Sterlings in the fermentors and whole leaf Centennials in the bright tank.

22 oz. bottle. Pours a hazy, golden-yellowish amber with a small white head. Great floral and citrus aroma. The flavor is similar to the aroma but some sweet maltiness comes on as the beer warms. Definitely on the bitter side, but that’s how I like my IIPAs. The alcohol is very well hidden as well.

NorCal tasting Jan 07 - This is an IIPA? Nose is caramel, some grapefruity hops. Nothing on overload, though it would be a good IPA. Appearance is copper in color, off-white head. Flavors were really malty sweet, caramel combined with some grapefruity hops. This was good. Not sure if it was IIPA good, but still good nonetheless. Perhaps this was an older bottle?

Bomber. Slightly hazy orange/amber color, with a nice head. Good amounts of citrus for an IPA, not overpowering, but decent. Good hop flavor, but again, not overpowering. Compared to some DIPAs, it was a little lighter, but still heavy.

Bomber. Pours a lightly hazy amber with a medium head. Fizzy. Very good lacing. Smells like pine, citrus with a rich caramel sweetness mixed in. Brown sugar was in the taste. Medium to heavy body. Syrupy mouthfeel. Balanced taste with a pleasantly bitter finish.

nice bright gold amber colour, some nice lacy head. the hop aroma is sweet not really citrusy.. nice strong hops on the flavour, big hop bitterness on the finish, kinda pine resiny. great ipa not my fav but a good one

Pours a small quarter inch, white, creamu, head. Aroma was a bit weaker than I would have expected considering it has 120 IBUs. There is a heacy hop aroma withlots of pine, spruce, and resin. Not much citrus, though. Seemed pretty heavy for a DIPA. Can really taste the alcohol.

First rate of the year and I have a feeling 2007 is going to be a good one. The Big A IPA is a cloudy, sediment-laden golden to amber color with a small head with lingering white lacing. Great floral aroma coming in a deep draught of the nose. Slightly syrupy in the taste with a lot of bitter. Slight piney aftertaste. Overall excellent.

Bottle. Cloudy amber colour with a nice head. Sweet aroma with notes of citrus, malt, caramel and some alcohol. Nice alcohlic flavour with notes of sweetness, caramel and ends with a hoppy finish.
