After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Opaque black. Smells like licorice, dark coffee, chocolate syrup. Taste is caramel, dark fruits, coffee, cocoa powder, but not really sweet at all. Slightly bitter finish, no alcohol warmth. Really good.

Bottle 10%, BBE 3 Jan 2015. Black. Salt licorice, roasty dark dry chocolate, some milky notes. Full bodied, light oily, but bitter enough. Ashy roasty, really roasty but in a soft, has-sweets, manner. Pretty ok. But as a RIS quite average. Was expecting more. This is just .. nice. Too harshly roasty for my palate.

Bottle: Thanks Hackobock: Served in a Duvel glass: Pitch black with a brown head. Aromas of coffee, roast, some brown sugars, some hops, dark chocolate, some citrus, cacoa and sweet coal. Flavours of bitters, roast, dark chocolate, mocha, some caramel, hops, light citrus, some coffee, hint of brown sugars, light spice, sweet coal, some hay roast, light soy, some dried leaf roast and cacoa. Aftertaste is a mix of strong bitters, malt roast, some coffee tones, hint of dark chocolate, hay roast and light earthy touch. Low carbo, oily thick mouthfeel, full bodied and an oily sticky texture. A thick and balanced no nonesense stout! Well done!

650ml bottle, 10% says label. Best before Jan 2015. Pours black color, thick, dense espresso head. Very smooth beer, full bodied, slightly sweet, oily mouthfeel. Lots of licorice in aroma, chocolate notes, coffee, some tobacco as well. Flavor has salty licorice, roastedness, coffee and chocolate cake. Finish is long and dry, more salty licorice here. I am weak for these kind of implerial stouts, and this is no exception. Lovely.

Pours a black brown color with a soapy light brown head. Notes of milk chocolate, smoke, chocolate liquor, brownie, earth, and licorice. Soft mouthfeel.

Bouteille. (Merci Brewgrav). Robe noire opaque, belle mousse café onctueuse mais évanescente. Nez complexe et gourmand sur le malt torréfié, le caramel brûlé, la vanille et le café au lait. Belles notes vertes de houblons et de distillat de prune. La bouche tout en rondeur est très expressive sur le chocolat, le caramel et le café. Finale sèche et amère sur le marc de café , marquée par des notes florales de houblons. La dégustation s'achève par une note chaleureuse d'alcool. Une impérial stout à l'américaine typée par le houblon. ---Rated via Beer Buddy for iPhone

Bottled from Systembolaget Pitch black with a beige head. Coffe, chocolate, figs, sweet dried fruits in both aroma and flavour. Soft palate. Slightly vinous.

Appearance: Pours dark brown, nearly black with a sparse khaki film atop.

Aroma: Big dark chocolate malt, aromatic herbal hops,walnuts, brewed black coffee.

Taste: Bitter roasted and burnt dark malts, spicy Euro hops, acidic black coffee. Semi sweet chocolate notes make the bitter and burnt aspects wonderful. Lingers well past the sip.

Mouthfeel: Full bodied, medium carbonation level. On the dry side.

Overall: A perfect example of an Imperial Stout. Depending on your own preference, you could drink it fresh with it’s sharp roast notes, or let it lie down for some mellowing. You can’t go wrong either way. Oh, and I’ll say it. Better than Kate The Great by a mile. I know this is a different product from a different brewer, but I had to say it.

Cant call this outstanding, but solid IMP all the way. Moderate roasted malts, quite intense hops in background, light choco, light vanilla, intense hop fruitiness for an IMP. Feels quite smooth. Sweetish with moderate bitterness. Enjoyable good sized bottle :P

Bottle. Pours a pitch black body with a large, creamy off-white head, looking quite spectacular. Nose is cocoa, lactic chocolate tones, leather, licorice and hints of dark berries and biscuits. Taste is dark chocolate, mild leather, licorice, coffee, dark berries and hints of lactic creamy caramel, dark malty tones and hints of dried fruits. Creamy, full body, soft carbonation. Lovely smooth imperial stout with great balance and mouthfeel.
