COMMERCIAL DESCRIPTION
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence wed have it return with a bang. We bumped up the starting gravity from 20 P to 24 P. This allowed the beer to finish just over 10% ABV. Like this years Barleywine, weve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least thats the story Im stickin to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as its aging. Id give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

What a unique beer: Not that overly impressive techniques, ingredients or unexpected results culminated in such a fantastic beer, but rather that Ive never tasted anything like it. This is a hop monster, which leads me to believe I have a very fresh bottle on-hand. The aroma on this is piny/floral hops and licorice. Thats it. Thats all I get. Flavor is more of the same. Piny, bitter hop bite, dark fruits (from the hops), licorice and a hint of dark chocolate. Hints of mint and Jaegermeister??? The finish is dry and resiny. This beer tastes like a damn Christmas tree (makes mental note to pick up a couple extra bottles for the holiday). Body is medium. No alcohol burn. Aftertaste is almost asphalt-like, but not in an offensive way. Im sure its roasty, but almost all aspects of imperial stout are masked by the copious amount of hops. This is the definition of an ager. Id hope the coffee, caramel and chocolate flavors would eventually come through in a couple years, but maybe not as this puts any "Black IPA" to shame, IMO. A force to be reckoned with, but with a price tag to love. $5.50/22 oz.. Pretty good now. Should be fantastic with age on it.

Draught. Inky black with creamy large chocolate-colored head, caramel aroma, low carbonation, mocha-caramel taste with a hint of berries, long bitter finish which releases the alcohol undertones suppressed succesfully until then. A very good brew, the only possible flaw being the bitterness of the coffee beans aftertaste.

4 oz draft pour at ChurchKey. 9.4% ABV. Black with tan head. Aromas of nuts, caramel, toffee, chocolate. Tastes of roasted nuts, caramel, toffee, chocolate, light dark fruit. Full body with a semi-creamy mouthfeel. Tasty and better than I expected.

MacBoost (1326) - Pouring Bus, New York, USA - OCT 12, 2014
Bomber from shelf. Pours black with a tan head. Aromas of roasted malt, coffee and floral hops. Nice nose. Taste is bitter and semi dry. Flavors of heavy roast, light coffee and even a touch of tropical hop juice. Further in I get some light star anise, a touch of ash and dark fruit. Finishes fairly dry with a decent roast and some lingering hoppy juice. This is world class.

Very smokey with an almost grill-like taste. Dark chocolate, cacao nibs, vanilla. Thick, with a cream consistency. Black pour with good mocha head and lacing. Light bitter finish. Very nice. Tap at Churchkey.

Draft at churchkey. Deep dark pour with mocha head. Some nice ass lacing on this. Aroma: smooth milky chocolate and roast. Prunes / whatever that old hop aroma is that makes me think of prunes. Taste: moderately sweet; dark fruits covered in chocolate and old hops; lasting roast bitter finish. Full body, slick creamy texture, average carbonation.

P: Completely black with a head that looks like the fluffy filling of a 3 musketeers bar, the head is just that thick. S: Not as bold as there Baltic porter but you get a good amount of chocolate, alcohol, roasted nuts, berries, vanilla and light coffee. T: Chocolate, dark roasted malt, light coffee, and a tiny hop note to finish it of. M: Thick and light carbonation. O: This is just a good straightforward irs.

"pretty stinkin hoppy, even at 2+ years old. roast, chocolate, spicy hops. great aroma at first got a little hot at room temp. prickly but full feel atop a black body. 100th percentile? no way. but a good impy stout that has some age on it. will rerate fresh if i get a chance."

Pours a dark dark brown color with a light brown head. Notes of chocolate, roast, espresso. Soft mouthfeel nice carbonation. Just a tad to bitter. But very nice.
