Named in honor of the doggy denizens of Brussels, this hybrid beer is a mix of what we love best in a big, roasty stout, but fermented with a Belgian yeast, which brings out a beautiful, fruity nose.
This relatively new sub-style combines Belgian, American and English influences to create a beer whose total is more than equal to the sum of its parts. Here’s how Zinneke breaks down and adds back up. Start with a strong stout. This is the Big Beer Series after all… then “Belgianize” it by altering the grain bill and fermenting the wort with a Trappist yeast strain. We backed off the heavy caramel and roasted malts to create a more complimentary flavor profile for the yeast, which contributes fruity esters and a light body. These parts combine to create a beer with dark color and light body with prevalent flavors of dark fruits, vanilla and toffee, while subtle chocolate flavors appear in the finish.

Very hot, toasty, a little too much not like a stout. Cool label. Could use more barrel but I understand why it doesn’t have it.

Bottle @ Exira Beer Summit IV. Thanks to Luke for this! Pours a deep brown appearance with a brown head. Anise, chocolate, fruity yeasty, somewhat spicy, mild bourbon, toffee aroma. Big licorice, Belgian chocolate, a touch woody, fairly dark fruity, moderately spicy, light bourbon, just a touch smoky, quite malty flavor.

Poured into a snifter. 3.5 A: Black color. Light brown creamy/frothy head. Retention is about average and a decent sized ring of lacing is left. 4.0 S: Nice nose on this. Christmas cookie spiciness meshes well with smokiness from the bourbon. Sweet caramel, dark candi sugar, plum, prune, raisin, and tobacco. Smokey bourbon with notes of leather, vanilla, and oak. Sweet, spicy, and complex nose. 3.0 T: The taste is more bourbon flavored than the nose. Much of the spiciness and sweet maltiness gets lost behind leathery and smokey bourbon. Vanilla and oak. Missing depth from the base beer. That’s about all there is to say. 3.0 M: Lighter medium body. Carbonation is a little bity without being spritzy or creamy. Just decent here. 3.0 D: Eh, it’s alright, but it’s nothing special. I’ve never been a huge fan of bourbon and Belgian, but I still can’t help myself from giving it a try. Bottle Poured into a tuliped snifter. Black brown appearance with a light brown thin head. Smells like a banana split from the yeast, dark roasted malts. Taste is sweet with milk chocolate, coffee, some smoke, and overlying dark chocolate banana-ish flavor with a bitter finish. Smooth mouth feel, medium carbonation. Not much bourbon, but there is definitely a Boozy character.

Bomber bottle and served in my big arse Tripel Karmeliet glass: Pours a very deep brown, nearly opaque with an initial big frothy tan head that fades. The aroma is twangy cherries and plums, heavy roasted barley and charred black malt, with a bit of Belgian yeast banana and bubblegum as well. The taste is sort of muddled... make that very muddled notes of fruits, roast and yeast. Some oak and vanilla towards the tannic dry finish. The mouth feel is far too thin for the genre. I do not care much for these Belgian Imperial Stouts and while this is better than most it still lacks depth, richness and complexity found in American and British styled version.

Pours a deep brown/black color with a sticky, light tan head that provides great lacing. Aroma has a strong bourbon nose but not overpowering, light fruity notes - apples, light raisin with some mild esters late. Grainy presence starts to show itself in the middle with some light toasted presence and finishes with a mild dark roasted kick. Flavor starts off pretty fruity with a lot of banana working with the bitter roasted malt and bourbon, creating a very unique flavor. This subsides to a mildly roasted malt presence, light apple and caramel malt sweetness with a finish of chocolate malt and a mild toasted malt kick. Body is modest/hefty with low carbonation and an overall smooth feeling. Alcohol is well hidden. Overall a very good brew. The bourbon is well balanced with the stronger roasted/toasted malt notes and the light Belgian estery sweetness. For the price a very nice brew.

Pours unclear dark mahogany with a decent beige head. Aroma brings some light wood and actually smoke peat notes, which I get on the flavor too! The body is not big at all, a bit creamy and nice though. The flavor of roasted malts is lighter, more of the smokey wood is what I get.

Bottle @ home. Pours opaque black with a small, frothy, tight bubbled tan head, short retention with spare lacing. Aroma is roast, dark chocolate, nutty, and earthy coffee malt, figs and prunes, and earthy hops with oak and bourbon notes. Flavor is malt dominant, light hops and bitterness, dark fruity esters, spices and earthiness with a bittersweet finish. Full body and medium carbonation.
