COMMERCIAL DESCRIPTION
Named in honor of the doggy denizens of Brussels, this hybrid beer is a mix of what we love best in a big, roasty stout, but fermented with a Belgian yeast, which brings out a beautiful fruity nose. We set aside a portion of the batch to age in bourbon barrels to allow the stouts chocolate and caramel flavors to marry with the woods natural vanilla and toastiness. The final blend pairs well with both savory dishes and your favorite desserts.

Usually not a big fan of the Belgian Stout style, but this one was aged in bourbon barrels so gave it a shot. Good balance of stout and Belgian, without too much of the Belgian sweetness. Nice stout, with a definite chocolate presence. Not too much in the way of bourbon, however.

From the 2012 big bottle. The pour is a deep ebony brown with a moderate short lasting head. An array of aromas fill my nose including sweet dark malts, chocolate, coffee, vanilla, smoke, cherry, and a dash of hops. The body is medium to full. The taste is malty up front with a wooden hard liquor character volleying with the sweetness followed by a moderate, lingering bitterness. Very nice beer indeed.

22 oz bottle pours a thick dark brown with quickly vanishing tan head and slight lacing. Aroma is full of dark fruits, Belgian yeast, and vanilla with traces of chocolate and brandy. Body is medium to full without too much carbonation. Taste is slightly sweet and spicy with a spicy finish, with alcohol present. Very good, but not one of the greats.

Deep dark pour with a brown head. Aroma is roasted malt, chocolate, sweetness, and a little vanilla. Taste is yeast, roasted malt, chocolate, little vanilla, some bourbon. Dry aftertaste. The alcohol comes out in the nose as it warms. A very delightful beer.

Bottle. Pours a very dark brown with a moderate tan head. Nose has just a hint of sweetness, but the dry nose with some roasting and hops in there dominates. Taste is definitely of the Belgian style with the yeast, but not too sweet, like the style.

22oz bomber from Spirits Crossroads. Medium density brown body under a foamy small beige head that quickly fades. Aroma is the best part of this beer. Notes of Belgian yeast, Belgian chocolate, vanilla, barrel, chocolate syrup, raisin,plum, slight brandy/bourbon. Flavor of dark semi-sweet chocolate, wet dark toast, dark fruits, wet wood bourbon barrels, charred wood, yeast. Not bad.

Hints of vanilla, caramel, dark fruit and bourbon on the nose. Poured dark brown with a think tan head and appears reddish brown in the light. Tastes of roasted malt and plums and raisons with a bourbon and dark chocolate finish. Decent overall, starts a little sweet and finishes more bitter.

Sampled at an esbls tasting. Black with red and a ring. I smell chocolate and lesser vanilla. Chpcolate is tasted, too. Soft hs and some fruit. A bot of yeast. I like it.

Pours a dark umber color with a couple fingers of khaki foam that settles but doesn’t leave... Aromas are subtle. Touches of roasted chocolate malts, a bit of dark fruit and the slightest touch of bourbon. On the palate its got plenty of bubble maybe even a touch too much though I know its a Belgian styled stout. Its solid with great roasted flavors and nice touches of deep fruit and chocolate mingling nicely. Solid stout but Id like a touch more bourbon character and a touch less carbonation.
