Named in honor of the doggy denizens of Brussels, this hybrid beer is a mix of what we love best in a big, roasty stout, but fermented with a Belgian yeast, which brings out a beautiful, fruity nose.
This relatively new sub-style combines Belgian, American and English influences to create a beer whose total is more than equal to the sum of its parts. Here’s how Zinneke breaks down and adds back up. Start with a strong stout. This is the Big Beer Series after all… then “Belgianize” it by altering the grain bill and fermenting the wort with a Trappist yeast strain. We backed off the heavy caramel and roasted malts to create a more complimentary flavor profile for the yeast, which contributes fruity esters and a light body. These parts combine to create a beer with dark color and light body with prevalent flavors of dark fruits, vanilla and toffee, while subtle chocolate flavors appear in the finish.

Bottle (thanks to goodbyeohio)... Poured near black with a light tan head. Good roast and malted grains with a nice charred and brûlée-like toasted sweetness. Yeast lightened it up a bit towards the finish. Mild hind of barrel and whiskey. None the less, still great tasting beer.

Pours a dark black/brown with a light tan head that faded to a thin covering over the beer. Aroma is heavy of bourbon/vanilla, roasted malts and dark fruit... some coffee too. Smooth on the tongue nice vanilla and chocolate flavor on the finish... very good!

Bomber big thanks to Phatdog1! Aged since 2012. Poured a opaque black color with a thin khaki head that lasted throughout. Initial boozy taste with a dry and sweet woody finish of roasted and toasted malts, cocoa and slight coffee. Low-medium carbonation, medium-thick body. Bad ass brew!

Poured from 22 oz. bottle after cellaring for 11 months. Opaque, dark rosewood color with a modest brown head and very good lacing. Aroma of Chardonnay, raisins, plums, chocolate, molasses, roasted malt and cola. Taste of raisins, roasted malt, chocolate, molasses, plums, mild coffee and white wine. Very good - nice smokey malt aroma with dark chocolate and coffee notes. Even a light note of peat here with hint of burnt toast. Pours black with good mocha head and lacing. A hint of prune or raisin here as well. Finishes bitter - mostly along the chocolate line. Soft carbonation. Bourbon aroma is faint and very well integrated. Finishes with a touch of booze as well. Bottle.

22 oz bottle shared by b3shine. Pours a dark brown color with a small beige head. The aroma and flavor have Belgian yeast, some roasted malt, moderate sweetness, chocolate, dark fruit and some woody character. The body on the foreign imperial stouts always seems to be lacking for me.

22 ounce bottle. Pours a dense black with a big bubbly tan head. Yeasty, roasted malt nose with hints of chalk and cocoa. Upfront, sweet roasted malt flavor has notes of bittersweet cocoa, tart yeast and light oak. Mid taste seems smooth and luxurious with a warming alcohol presence. Finish is bittersweet hops, more tangy yeast and vanilla bean. Very delicious.

An dense black body with a tan head that had solid retention and good lace. Aroma was a mix of roasted malts. Dark cocoa and alcohol. Mild oak. Initial flavor was slightly roasted but mostly sweet. Mild hints of bourbon. Some oak. Alcohol was a nice warming presence. Could not distinguish any Belgian yeast. Nice body and mouth feel. ---Rated via Beer Buddy for iPhone

Almost black colored pour. Big tan head. Plenty of lacing. Smells of creamy malt and dark fruit. Taste is a fruity malt flavor with molasses. Nice sweet finish. Pretty good.
