Named in honor of the doggy denizens of Brussels, this hybrid beer is a mix of what we love best in a big, roasty stout, but fermented with a Belgian yeast, which brings out a beautiful, fruity nose.
This relatively new sub-style combines Belgian, American and English influences to create a beer whose total is more than equal to the sum of its parts. Here’s how Zinneke breaks down and adds back up. Start with a strong stout. This is the Big Beer Series after all… then “Belgianize” it by altering the grain bill and fermenting the wort with a Trappist yeast strain. We backed off the heavy caramel and roasted malts to create a more complimentary flavor profile for the yeast, which contributes fruity esters and a light body. These parts combine to create a beer with dark color and light body with prevalent flavors of dark fruits, vanilla and toffee, while subtle chocolate flavors appear in the finish.

2012 bottle. near black with a small tan head. toasty, chocolate chip cookie aroma with faint hints of dark fruit. a nice mix of roasted grains, chocolate and dark fruits from the yeast. medium to full bodied. nutty finish. i get absolutely no barrel influence in the flavor, but its a nice belgian stout anyway.

Bottle. Brought this bottle that I aged 13 months to the In-laws to share. They made the Easter dinner for us. Pours dark brown with a small, creamy, tan head. The aroma is a collection of chocolate, plums, figs, vanilla, brown sugar, toasted bread and roasted nuts. Full-bodied and oily with modest carbonation. The flavor is nicely balanced – roasty, toasty and loaded with dark chocolate, figs and dates. Lightly bitter finish.

(Rating #6807)

Bomber from Cigarette City. Pours dark brown with a beige head that quickly fades to a ring. Aroma is dark chocokate, raisin, fig, a hint of vanilla. Flavor follows. This is a nice, easy drinking stout, especially for 8.7%! With flavors of light molasses, dark chocolate, raisin, fig. A hint of vanilla in the finish.

Pitch black, cloudy and opaque with a one finger light beige head that quickly settles into a thick, lasting ring. Spotty lacing left behind. Slightly earthy, roasted malt aroma. Some piny resinous hops countered by dark chocolate malt, toast, coffee bean and oatmeal. Decent amount of roast but sweetness and fudge/dessert like characteristics are dominant. Still slightly hop forward. Medium bodied with a decent balance of earthy hops, roasted malt and alcohol sweetness. Dry piny bitterness up front with resinous oils and grassy pine needle flavor. This is countered by sweet chocolate, toffee and caramel as well as burnt toast, dark chocolate, oatmeal and roasted coffee bean. Prominent boozy sweetness and heat in the finish. Decently balanced but a touch too hot for my preference.

draft sampler that poured a dark brown with light brown head. the nose was of roasted malts and hints of hops and that strain of Belgian yeast mild yet very distinctive. the flavor you get that same Belgian strain but I picked up notes of bourbon and vanilla and oak..all very mild in degree. most notable was the chocolate. decent abv but still off in a way...otherwise still drinkable
