COMMERCIAL DESCRIPTION
a 7.5% ale brewed with roasted and de-bittered black barley, dry-hopped with Simcoe for a piney, resinous aroma, and fermented with saison yeast for a spicy, fruity, earthy funkiness. We guarantee you’ve never tried a beer quite like this.

At the Uppers and Downers event. Jet black in color. Hops are forefront followed by a touch of coffee. Nice balance in the end.

Had it on draft at black rock. Black pour with a ton of foamy head covering the whole glass. Fruity and cocoa aroma. Roasty citrus cocoa taste. Really good beer. Really unique

Had on tap at the Solemn Oath beer dinner at Wild Monk in LaGrange. Served in a snifter. A: Pours a solid black color with some dark brown edges. A dirty, light khaki head forms on the pour and recedes to a small ring. Soapy lace if left down the glass. S: Green hops with some bittering pine. Mild roast with a light coffee bean note as well. The yeast starts to kick in on the finish with some peppery nuances and fruity esters. T: Unfortunately the taste didn’t live up to the balance of the nose. The piney hops were still present, but the roasted malts really took a back seat to the yeast. The yeast dominated with some peppery notes and actually some mild soapy notes as well. M: Medium bodied with a medium carbonation level. Sweet, yeasty, soapy finish. O: It was definitely an interesting take on the style, but unfortunately the yeasty component turned into some off/soapy flavors. This keg was a few months old and the SO guys sat on it to let the yeast develop a little more. I think this beer would have been best served fresh. Serving type: on-tap Reviewed on: 09-26-2012

Draft at Jerry’s, Dark, clear mahogany with thin beige head / Rich, sour, earthy, bretty nose of dark fruit, coffee, but mostly just barnyard funk / Medium body, creamy with low carbonation, lightly chewy, with great balance and dry finish / Flavors of cocoa, moss, oatmeal, date, horse blanket, and rotting orchard fruit / More great stuff from this new brewer.

On tap at the brewery. Pours a deep brown, almost black colored beer with some reddish hues. Finger-width, dense and creamy, light brown head that dissipates slowly and leaves a nice lacing. Aroma is big floral citruses, a nice Belgian yeast giving off some dark fruit esters, some dry roasts, cocoas, a light breadiness, and a few resiny pines. Flavor is similar. Lots of citrusy florals with some grapefruit pine resins up front before a nice chocolate backing and moderate dry roast comes in. Belgian saison yeast goes really well with everything with some dark fruit notes and a touch of banana in the end. Finishes dry and fairly bitter with a nice mix of citrus florals, light grapefruit pines, cocoa, Belgian yeast, roast, touches of earth, and a slight biscuit. Lengthy aftertaste following a smooth, medium body and a soft, moderate carbonation. Overall, I really liked this. The big citrus hops, roasts, and cocoas blend really well with the saison yeast. Really easy drinking and well balanced with all that’s going on. Great beer.

Draft on tap at the brewery (Naperville, IL). Several new rates today. Pours a brownish hazy pour, deeper body with some glow and a touch of ruby on the edges and bottom. Frothy tan head dies to a thicker film, good lacing. Aromas offer cocoa, mellow roast. Dry florals, some biscuit and caramel. Bit of dark fruit as the Belgian yeast gives a shout out, citrusy fruit, and floral hopping have some legs. Initial is cocoa and biscuits, a bit of toffee. touch of dried fruit and gentle Belgian yeast influence. touch of cocoa. Quickly moving into a bitter hop centered middle. Fresher hops offer firm florals and a good deal of citrus, some resinous pine, grapefruit and growing bitterness. Moderate bitterness trails into a toasty and biscuity backend, lingering cocoa and touches of roast mix with a firm bitterness that certainly has some staying power on the finish and aftertaste. Good play between the elements, palate gets a workout as you work your way through some good contrast as you go through the experience. Nice.

4oz draft at brewery. Pours black with a small tan ring for a head. Aroma of roasted malt, chocolate, caramel, and hops. Taste of hops, chocolate, malt, and yeast, this medium bodied brew is very well balanced. Nice brew.
