COMMERCIAL DESCRIPTION
(oob-LEE-ette) Aromatic Belgian malts and yeast combine with American variety hops in this golden blonde colored ale to produce a melange of fruit flavors including orange and grapefruit citrus and tropical fruit.

Draft at Bavarian Lodge, May 24. Bright, clear pilsener color, puffy foam head. Yet another big american hop nose, just slightly less that the uhf I had before this. Hops are the first thing on the tongue, but only for a few seconds. Then a mellow, spicy Belgian yeast and aromatic light malt sieves in. The next sip brings back that hop bomb once more. Plenty of nice foam lacing on the glass leaves no doubt about its Belgian heritage. Bitter hops still dominate over the yeast at the bottom of the glass.

I had to look up the definition, and now I’m curious what led to a beer named after a cellar dungeon with a trap door in the ceiling. Aroma is malted and bready. Appearance is a dark, brownish orange. Taste is grain as found in the aroma, juicy hops and banana bread. Palate is medium bodied, low amounts of carbonation. I wasn’t especially wild about this one overall, but I’d like to try it again when it’s fresh at the Naperville brewery and the hops are especially in play.

Tap at Haymarket in Chicago. Clear yellow to slightly orange pour with a nice spotty white head. Yeasty aroma. Spicy with a touch of citrus. Delicious brew.

On tap at the brewery. Pours a cloudy orange-gold colored body with a finger-width, dense, frothy and creamy, white head that dissipates slowly and leaves a nice lacing. Aroma is clean Belgian yeast with some spiciness, tropical fruits, and citrus. A few banana notes, grass, and a very lightly sweetened grainy pale malt backing. Flavor is similar. Grassy tropical fruits and citruses with a spicy Belgian yeast. Grainy pale malts before this finishes quite dry and spicy with some grassy fruits giving off a medium-light bitterness. Lengthy aftertaste following a light body and a crisp, moderate carbonation. Overall, a pretty solid Belgian ale. Dry and spicy with a nice grassy fruit. Enjoyable.

Had on tap at Brixie’s. Served in a shaker pint glass. A: Pours a clear golden yellow with a creamy white head forming on the pour. Thick with nice retention that leaves some sticky lace. S: Fruity Belgian yeast is prevalent on the nose with light cracker malts and minimal grassy hops. T: Nice Belgian yeast characteristics with some fruity esters. There’s a slight spiciness to it, but the pale ale start to come through with some cracker and pale malts with a little bit of bitter hops in the finish. M: Light bodied with a nice carbonation level. The finish is clean with just a hint of lingering yeast. O: A highly drinkable Belgian IPA is always a nice addition to any line-up. I’m two for two in enjoying Solemn Oath beers so far. Keep it up! Serving type: on-tap Reviewed on: 07-08-2012

4oz sample brewery 8/10/12-Pours a slightly hazy golden with a white covering for a head. Aroma of yeast, citrus, and hops. Taste of yeast, citrus, hops and grapefruit. A well balanced medium body brew. Quite tasty.

On draft at brewery, poured a light golden yellow color, aromas of spicey yeast, tropical fruit, and then some pepper. Flavor follows suit, tropical fruit upfront, followed by some nice spice in the finish, real nice beer overall.

Draft at Jerry’s. Darker gold with good, foamy white head / Crisp, elegant nose of lemon, banana, grain, and soap / Medium body, soft carbonation, with excellent balance and bitter finish / Stylish flavors of grain, resin, banana, orange, lemon, and bread / A beautiful ale for the summer.

Draft at so, pours clear gold with white head. Aroma had spicy yeast with tropical fruits, tangerine, pineapple and coconut. Flavors are spicy, black pepper kicking from the yeast, grapefruit rind and pineapple. Really crisp and refreshing. The spicy yeast could become too much but this 4oz pour is good.

draft at Farmhouse Tavern, Chicago. clear golden body with a white head. herbal, astringent wood laquer presence up front with coarse, husky grains and moderately bitter hop presence. light touches resembling anise and juniper are present with a stronger dried orange peel note. shows promise early but develops some hairspray / acetone notes as it warms and opens up.

Sampled at the brewery. Light aroma some hops in there and Belgian yeast. Slightly phenolic. Cloying bitter flavors. Grassy. Not clean. Not too great. Boozy. Bitter. Somewhat medicinal. . It seems like a lot of their beers are on the grassy side, maybe they can't get thus cool quick enough or they aren't getting all the hops filtered out somehow.
