COMMERCIAL DESCRIPTION
AH, A PARADOXICAL CASE of small = large. After decades of tinker, tweak, improvise and analyze, David honed in on a surprising insight: size matters. Smaller organic apples simply yield bigger, more intense flavors. And so, The Hatchet was born. Intensity behind us, the subtle work of balance and nuance began.

Using a unique blend of native organic apples, we handcraft each batch to bring out fresh, ripe apple aromas, carefully pairing sweet and tart varietals to ideal effect. The result is a clean, refreshing hard cider with noticeable complexity and a lively finish. All hail the little things. To our tastes, there’s simply more going on in here. Cheers.

12 Fl. Oz. Bottle. Poured fizzy, pale yellow, clear, minimal white head. Aroma of red apple, honey, and floral notes. Taste is slightly tart, obviously some apple, not too acid and fairly dry. Very nice cider, crisp, refreshing, drinkable and enjoyable.

The hatchet, that was me name down the pub! .. . Gold yellow .. Light foam, then nothing .. Very simple cider, kinda sweet .. . Meh, boring .. . . I enjoy carrying a bell and ringing it at bars

On draft at Cajun Cafe Cider and Mead Fest 2015. Pours a light yellow with a white ephemeral head. Nose is red apples, some sweetness. Flavor is similar- simply apples- light in body and very nice overall. A light and refreshing cider.

[2/14/15] Draught at Lagunitas in Petaluma. Clear golden with a white head. Aroma of apples. Rather dry flavor with light sweetness, apples, a light sulphury hint and a faint alcoholic hint. Refreshing.

Crisp and dry, not a terrible offering as far as ciders go. Crisp pour with red apple aromas and sweetness. Flavor follows with a dry, somewhat crisp finish. Not bad for a cider

Very light and pale pour with a short lived head. Nose is weird, has an almost acetic note to it with a definitive white wine character. Raw apple flesh/skin. Vinous in the mouth with a light acidity and red apple flavor. Light bodied and dry.

Red orange in color it has an aroma of sweet Apple. It is sweet when it hits your tongue but has a very dry finish. Good cider without too much sugar

Bottle. Head is initially small, fizzy, white, fully diminishing. Body is very light yellow. Aroma is notes of apple, apple candies. Flavor is moderately sweet, lightly to moderately acidic. Finish is lightly to moderately sweet, lightly to moderately acidic. Medium body, watery texture, fizzy carbonation. Non-serious American-styled rendition; i.e. apple soda pop. No flaws though.

650ml bottle. Pours a pale yellow color with a small white head that quickly vanishes. The aroma is very mild and undistinguished with some faint apple. The taste is washed out apple juice that has been carbonated. The palate is thin and watery. Finishes short. Overall: meh
