COMMERCIAL DESCRIPTION
AH, A PARADOXICAL CASE of small = large. After decades of tinker, tweak, improvise and analyze, David honed in on a surprising insight: size matters. Smaller organic apples simply yield bigger, more intense flavors. And so, The Hatchet was born. Intensity behind us, the subtle work of balance and nuance began.

Using a unique blend of native organic apples, we handcraft each batch to bring out fresh, ripe apple aromas, carefully pairing sweet and tart varietals to ideal effect. The result is a clean, refreshing hard cider with noticeable complexity and a lively finish. All hail the little things. To our tastes, there’s simply more going on in here. Cheers.

650ml bottle. Pours a pale yellow color with a small white head that quickly vanishes. The aroma is very mild and undistinguished with some faint apple. The taste is washed out apple juice that has been carbonated. The palate is thin and watery. Finishes short. Overall: meh

Pours from 12oz bottle a sparkling light golden pour, quickly fading white head, nice bubble action. Aroma of golden delicious apples, some vinegar and grass. Flavour evident apple, somewhat subdued tartness. Not overly carbonated, somewhat smooth. Drinkable apple cider, not my style but I like it as a change up from my beer.

Bottle. Pours with a crystal clear pale hued body with a white head that has minimal albeit decent retention for a cider. Aromas are sweet, floral, very light sulfur, almost honey, mildly carbonic. Flavors are sweet, mildly metallic towards the end, medium acidity, nearly no tannin. Somewhat clean, low ester. Floral. Medium body, off-dry, medium carbonation.

This pours a clear, light yellow color with a slight bit of carbonation. The aroma is bold with tart apples. The taste is light and thin but with a decent apple flavor. Something a little different and organic than ciders from the big companies.

12oz bottle. Fizzy white bubbles over a yellow hue. Thin aroma of white apple meat. Medium dry flavor. Complex apple tastes. Hints of small apple tartness, crabapple like. Fermented flavor of sweet apple. No natural sugar left. Mineral, salted finish. Thin body. Tastes like small batch, simple yet complex. Perhaps the best American Cider I’ve tasted. (4137)

Bottle. Pours clear gold with large amounts of visible carbonation and a small, fine-grained white head. Nose is mostly malic and acetic; smells like a good apple cider vinegar. No vinegar on the tongue, but not much more than pretty basic apple flavors; it’s not candied, but most of what I can say about it is medium. Medium flavor, medium sweetness, medium interest, It’s just sorta there.

The aroma is slightly sweet but mostly dry. The appearance is yellow. The taste is a well balanced cider. The palate is typical of cider. Overall no funk and not overly sweet or sour just clean cider. Good!

This is a simple, tart and champagne-like cider. It is nearly clear in color and actually even has a ring of head that lasts the duration. I am getting mild florals in the nose and green apple flavor. This is very dry for a cider and has a persimmons-skin astringency that emphasizes this. This has crisp, biting carbonation w/ some lingering fruity notes in the finish. This is not the most complex stuff in the world and I find myself wishing for some more going on in the nose but this is a definite step above most American ciders in so far that it is in no way an alcoholic apple juice flavored soda.

Botle: Very pale gold.....clear...with a quick white head. Sweet apple aroma. Taste is tart/sweet red apple....almost a saltiness to it. Fairly acidic as well. Good, but could be a bit sharper.
