COMMERCIAL DESCRIPTION
Onyx is a second generation fermentation in Pinot Noir barrels subsequently filled with spirits. The whiskey was then drained and the barrels were refilled with our black "double" IPA. Nearly twice the alcohol and bitterness. Notes of sherry, chocolate, roast barley, and toasted oak. As one would expect, a hint of smooth rye whiskey on the lingering palate. Refermented in the battle. In Sonoma Valley some make wine, some make cheese, some make spirits, we brew beer.

24 oz. bottle from the brewery. It pours a dark brown color with a tan head. The aroma is very nice with a perfect balance of pinot grape and black cherry, wood, pine and light toast/cocoa. The flavor hits you with a blast of wood and tart grape/cherry followed by an earthy bitterness, burnt toast and light tobacco notes. The body and carbonation are perfect. Thankfully, I don’t pick up any whiskey… just the pinot noir. It has a lightly funky, phenolic bitter finish. Wow. I was really surprised by this one. Really enjoyable sipper. I continue to be thoroughly impressed with this brewer.

750 ml corked and caged green bottle shared by Forgetfu ( thanks Bill!) poured a clear dark reddish brown with a small lingering tan head. Aromas of charcoal, roastiness, grapefruit, red wine, oak and light rye. Palate was light bodied and crisp with a dry finish. Flavors of roastiness, red wine, charcoal, oak and light citrus with a crisp dry lingering red wine finish.

Bottle @ Ratman’s house. Thanks to forgetfu! Pours a brown/black appearance with a tan head. Dark grape, chocolate, tangy berry, tannic nose. Fairly dry, rich grape, herbal, a bit spicy, juicy, rye flavor. All over the place with little black ipa left.

Pour out of 750 mL bottle, thanks a ton Bill! Dark black pour with tan head, aroma brought notes of wine, pinot, hints of slight wine, slight chocolate, roast, hints of grain, biscuit, coffee, finishing with a hint of oak. Taste is a mix of sour fruit, grapefruit, slight grape, whiskey, rye slight oak, hints of coffee, chocolate, finishing fairly sweet, slightly dry, bitter, funky.
