UPDATED: JUL 6, 2013 This is a fantastic trippel with hints of its northwestern origin in the ever so slightly hoppy finish. Enjoy it in the late afternoon sun overlooking the puget sound.

Not my style of tripel. Pours a dark straw with a finger of dense off white head. The aroma is strong with yeast and spices. Lightly floral and spiced with cloves and coriander. Toasted bread malts and caramel sweetness up front with floral notes throughout. Light peppery hops and an earthy yeast flavour. Overall the finish is boozy and a bit bitter. Just an odd showing stylistically.

Bottle at home. Poured cloudy orange, light head of form that disappeared quickly. Aroma is light and fruity; lots of apple and some hay. Taste is of apple and bread, slightly sweet. Medium body. Easy drinking for almost 10 percent. Enjoyable, but not earth shattering.

On Tap at the Poulsbo tasting room Light bright golden yellow Lasing white soapy head. Lots of sweet light maltiness. Terrific Belgian yeast character. Some bitter papery notes at the end.

Bottle. Head is initially small, white, fizzy/frothy, mostly to fully diminishing. Body is dark yellow. Aroma is moderately malty (malt syrup, grain), with notes of bubble gum, overripe banana, cotton candy, corn syrup, alcohol. Flavor is heavily sweet, lightly acidic, lightly bitter. Finish is moderately sweet, lightly acidic, lightly to moderately bitter. Medium to full body, syrupy texture, lively carbonation, moderately to heavily alcoholic. Pretty horrid...sugar-coated cartoonish Americanized version of a Belgian strong golden, all Bubble Yum and blackened banana, sugar sugar sugar. Complete drain pour.

Serving: from bottle--purchased at Sound Brewery. Aroma: moderate apple aroma. Appearance: very small, frothy, white, initial head with no lacing and fully diminishing longevity. Clear, light-amber body. Taste: over-ripe fruit initial flavor and lightly sweet, apple-like finish with short duration. Palate: medium-bodied with dry texture and soft carbonation. Overall: excellent. Unique flavor and easy to drink.

22 ounce bottle into chalice, no bottle dating. Pours fairly crystal clear golden orange color with a 1-2 finger dense white head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass, with some light streaming carbonation. Aromas of apricot, apple, pear, banana, grape, honey, candi sugar, bubblegum, clove, light pepper, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy esters with a good amount of malt presence. Taste of apple, pear, apricot, banana, grape, honey, candi sugar, bubblegum, clove, light pepper, and yeast earthiness. Lingering notes of light fruits, banana, honey, candi sugar, bubblegum, clove, and earthiness on the finish for a good bit. Very nice balance and complexity of fruity/spicy ester flavors; with a good amount of malt balance and no cloying sweetness after the finish. A little too malty for my preferences, but it is still quite balanced. Medium carbonation and medium-full bodied; with a creamy and slick mouthfeel that is good. Alcohol is well hidden with only a small warming noticed after the finish. Overall this is a very nice Tripel style. Very nice balance and complexity of fruity/spicy esters with moderate malt balance; and quite smooth to sip on for the ABV level. A very enjoyable offering.

Sweet malt aroma backed by banana. Taste follows suit with the sweetness. The yeast culture is of course the base of all the flavors. Not boozy at all considering the alcohol content.

Bottle:   Yellowish straw, a little dirty, moderate to large frothy white head, dies quickly, sparce lacing.   Somewhat of a spicy wheaty nose, pale breadiness, faint alcohol.   Bready on the tongue, light alcohol, smidgen of pear/apple skin.   Feels a bit wheaty too.   Pretty much your standard American Tripel that is neither very Belgian like, bright, spritzy, floral, etc...   For what it is, an American interpretation, its not bad.   Body and mouthfeel are moderate to full.   Lingering wheatiness, breadiness, with faint pale fruit.   Solid, but like many others.

Bottle from Phil. Slightly dark golden straw color. Aroma is tropical fruit and bananas, subtle yet rich without being cloying. Very lively palate, some warming. Bananas back in at finish. Not too shabby.
