COMMERCIAL DESCRIPTION
Named for a long extinct Russian Cave Bear. Ursus Spelaeus is as deep and dark as the caves it once inhabited. Blends of rich maltiness, notes of chocolate, coffee, toffee & subtle licorice with a perfect balance of hops. The Belgian yeast strain adds touches of fruit, herbs, and spices.

Bottle:   Black, deep cola hues, thin to moderate tannish head, frothy, spotty lacing.   Little bit of a musty roastiness, slight basement, not too funky.   Has a slight smokey aspect to it, much like a Rauchbier.   Roasted funk on the tongue, and also a slight touch of Rauchbier.   Very interesting, wasn’t expecting the smoke aspect.   A bit of dark chocolate as it warms.   A little astringent, slight hoppiness on the backside.   The 10% ABV is well hidden.   Assertive cocoa like roastiness on the backside, slightly musty.   Fairly clean, interesting and different example of an Imperial Stout.

Solid back with thin layer of tan head. Aroma of grape soda and chocolate with some yeastiness. Rich coffee flavor with molasses and some tobacco. Finishes with a healthy dose of hops.

Bottle. Pours reddish cola color. Clear, with no head. Aroma: Tons of banana. Roasty, chocolate, and alcohol in the nose. Taste: roasty, malty, more banana. This one is a little hot. Lingering roast bitter finish. Ash in the aftertaste. Dry. Medium body, average carbonation, slick texture that feels somehow a little thin. Overall: It probably isn’t fair to this beer that I had it shortly after one hell of a fine barrel-aged barley wine. I didn’t pick up on the licorice or "fruit" as much as the commercial description led me to expect, unless by fruit it meant banana, because that was a distractingly large component of this one for me.

22oz Bottle purchased from the brewery. Pours a dark black color with no head. Wonderful smooth flavors of chocolate and spice. I think maybe this beer is better characterized as a Belgian Strong Ale.

Bottle shared by toffsbury - thanks! Pours opaque black with a tan head, and lacing made up of big bubbles. Aroma is roasty and spicy. The taste can also be mainly described that way: roasty and spicy. Some molasses and dark fruit notes creeping up in there too. Tasty stuff.

Wow, this is beautiful. Opaque and creamy black. Aroma is sweet toffee coffee with caramel and chocolate. Flavour is friggin’ delicious. Sweetness with coffee bitterness lurking behind. Tastes just like a damn good stout. Big body, with a slight alcohol burn, but not too much. Man, I really like this.

Solid black-brown with virtually no head. Aroma is vanilla, raisins, liquorice, chocolate, fig. Slightly oily mouthfeel, pretty well balanced on the palate. Taste is coffee cake, fig, liquorice, chocolate, chicory. The Belgian yeast provides done good character, this beer should age very nicely.

Pours a dark black with a beige head that dissipates quickly. The nose has smoky coffee, dark chocolate, and vanilla. 650ml bomber pours black in color with a huge light brown head that retains well and settles down to leave little lacing behind. Aroma is roasted grains with chocolate and dark fruits and hints of smoke. Taste is roasted grain and hop bitterness with a chocolate and dark fruity sweetness with a light smoky and dry finish. Medium to heavy body with mild carbonation. Quite a tasty and enjoyable imperial stout that is highly recommended.
