Brown with an amber tint - fizzy but large head - high carbonation, almost a bit harsh on the palate - peppery/spicy at first,making way for more typical old ale qualities like brown sugar, oak, chocolate, figs, plums - dry, almost tannic near the end - some red wine qualities - not Southamptonís best, but of their contract brewed bottlings, this one is the best, and is much more complex than Iíve heard others describe it.

UPDATED: DEC 15, 2007 750 ml bottle, drunk at about a year and a half old. Deep brown with an orange tint. Huge sticky rocky head. The aroma is quite lovely now. Lots of rich plummy fruit, orange rind, raisins and a soft earthy woodiness. Wintergreen mintiness and a lightly sherryish note. Flavour is sweet and minty, some chewy caramel, raisins and a lovely minty hoppiness. Yeast is fairly spicy with a hint of clove and bubble gum. Excellent balance. The hops have faded greatly and the fruits have picked up a ton. Rummy and plummy with some dried figs throughout. This is so much better than the first time around that I canít even believe itís the same beer. Iíve got to go pick up a few more bottles now, just to see how it does with another year or two on it.
750 ml corked and caged. Pale brown beer, thick tan head. Aroma of herbs, dill and oregano. Odd first impression. Some light oakiness as well. Pale molassesy aroma, a bit of alcoholic pepper. Light perfumy notes as well. Flavour is very peppery and alcoholic, thin bodied, which I consider a big no-no for this style. Some light floral flavours, orange, molasses and ethanol. Warming brings out a bit of plummy fruit. Like their Old Herb, this one just doesnít do it for me and I donít think itís going to get much better with age.

Iím impressed by this beer. Nice dark copper like color- large off white head, which lasts forever. This beer is smooth. Nice malt flavor. with no real finish at all. Just a sweet mellow taste. Good show!
