Bottle, 2008 Pre-GBBF Chris_o Shindig. Rusty brown, lots of butter-colored head. Rose petals, mint, pears. Heavy raisin sweetness, a bit of iron. Not really bad, but far too thick and sweet for a quad.

Deep, rich, thick and chewy. Doubtful that it took 12 abbots to brew this, but may well have taken them all to heft the grain to the grist mill. Tad peppery, fruity (plum, yum) and simply a complex delight. (note: I said COMPLEX and used it on pupose)

2006 bottle. Cloudy brown, with a tan head. Aromas are dark fruit, spices, malt, and a bit of wood. Flavors are spices, malt, dark fruit, wood, brown sugar, and alcohol. Dryer than expected.

Re-rate: Dark reddish-brown, body with a small off-white head. Very sweet aroma and brown sugar flavor. Many spicy wintery fruits are in this beer, such as figs and raisins. Heavy maltines with a very clean, finish. The flavor is filled with grass and herbal notes. Earthy and very tasty. Ever-so-slight bitterness lingers, and its very hearty yet refreshing at the same time. This is a great beer! I had no idea there was so much alcohol in this one.

This one poured a murky mahogany brown with an off white beige head. Aroma was dark fruits, roasted, spices and alcohol. FLavor was sticky sweet upfront with the dark fruits coming through, finish was dry and spicey with a lingering but not overbearing alcohol presence.

Chestnut body with a huge fluffy lasting head leaving beautiful lacing; Deep very nice fruity nose with lots of blackberries but a little to clear dark sugar aroma is present in the background; The body is very nice, deep and complex with a very fitting big bubbled carbonation, a very unfitting very clear dark sugar sweetness is overpowering any possible bitterness; The sweetness is even more apparent in the finish where it becomes a bit sticky and the dark sugar aromas WAY to apparent, some dark nutty malt aromas try to compete but they are very hard to detect. A quite big sugar adjustment and you would have a prime example of a BE Quadrupel.

Part of the many beers tried at RAYBOY01’s Cajun Fais-Do-Do, thanks htsprint1. Red amber with off white head. Red fruity, sweet malt aroma. Red apple(fruity in general), very sweet, caramel, grapefruit. Thin and med carb. Very sweet overall.
