Can. Clean, brown pour. Nice hoppy (citrus and pine) aroma with a slightly sweet essence as well. Not overly resiny, but still medium mouthfeel. A bit bitter starting midpalate through finish. Citrus is somewhat muted in the flavor.

Can. Pours a dark orange-amber with a high, cream-colored, pillowy head. Nose is pungent mint, camphor, spruce, and geranium. Intense eucalyptus hops bitterness on the tongue, with a spritzy overtone of tangerine and pomelo. Bitterness lasts through a long, long finish. Intense.

Tap at T&P. pours a very cloudy dark orange to red color. Ring of light head. Aroma is sweet, sappy, citrus, candied sugar and hops. Flavor is also very hoppy, sappy, dry, earthy and wood bitter. ---Rated via Beer Buddy for iPhone

12 ounce can. A thick creamy beige head lasts a long time and leaves cool lacing. The beer is brown copper and opaque. I smell tropical fruit and rich caramel malts. First taste is of big bitterness in the tropical and passion fruit flavors. The malts are bready and yeasty. The big bitterness remains and is aggressive. There is also a lot of sweetness under that but it is hop forward. Those hops are unique, too. Tasty stuff.

Orange with a touch of reddish brown, hazy, head and lace not bad. Aroma and flavor are that of what I consider a subdivision of IPAs/IIPAs, a "malty" IIPA. The malt backbone is bold, the body thick and almost chewy. This is the base for plentiful hops additions, which make this beer more "balanced" (if you can say that about any IIPA). The hoppiness is complex and earthy, bitterness high, but it almost seems to mellow as you enjoy the beer and it warms. The balance between the maltiness and hops is very enjoyable. Whether my style musings are worth a darn is somewhat irrelevant tho, this beer is tasty. The overall characteristics of this beer meet with my previous experience with southern star: the beer itself was a bit unusual, but nonetheless quite delicious. So thatís 2/2 so for for southern star. Iíll be trying something else from them next time I get a chance! Love the fact itís in cans too.

Tap at The J. Clyde. Pours clear amber with a medium, frothy white head, medium retention with good lacing. Aroma is spicy alcohol, mango and apricot, pine and resin hops with biscuit and honey malt. Flavor is heavy hops and bitterness with supporting malt, light fruity esters and a dry finish. Full body and medium carbonation.

Southern Star Valkyrie has a very thick, beige head, a murky, gold-orange appearance, noticeable gray floaties, and significant lacing left behind on the glass. The aroma is of fruity, rather floral, hop-oily bread, and the flavor is of sweet, bready barley malt and super-bitter hop oil. This really does live up to its billing of 100 IBUs. However, as it warms, and one drinks it down, it does mellow out and becomes a very chill drinking experience. The mouthfeel is heavy and syrupy, and Southern Star Valkyrie finishes dry, rich, quite sweet, and decently sip-able. The alcohol really does not show itself with this one. Bittering hops come close to shutting down all other expression. Nevertheless, this is an interesting if overpowering bitterness. There are traces of resin and hints of grapefruit which emerge briefly from time to time. The bitterness is sticky and lingers for an exceptionally long time. This is not the bitterness of faded hops. It is aggressive and has depth.

12oz can 11/7/13 (Whole Foods-Lamar)-48į in Shaker-Pours a darker amber with a big off white head. Aroma of hops, malt, and caramel. Taste of hops, caramel, and malt. This full bodied brew has quite a bit of caramel which is not a bad thing but just different.
