4pk, cans, from my local Specs, a couple of days after coming back from Penn/NY/Niagara .. pours a deep orange .. great foam, same with lacing .. pure hoppy goodness, such a truly solid bitterness.. . one of the nicest double ipaís i have ever had. .. . 5 hour drive, 4 hour flight, 1 hour drive, bed fuckin rocks!!

Southern Star Valkyrie has a very thick, beige head, a murky, gold-orange appearance, noticeable gray floaties, and significant lacing left behind on the glass. The aroma is of fruity, rather floral, hop-oily bread, and the flavor is of sweet, bready barley malt and super-bitter hop oil. This really does live up to its billing of 100 IBUs. However, as it warms, and one drinks it down, it does mellow out and becomes a very chill drinking experience. The mouthfeel is heavy and syrupy, and Southern Star Valkyrie finishes dry, rich, quite sweet, and decently sip-able. The alcohol really does not show itself with this one. Amazing citrus... pairs well with a relaxing afternoon. Make more like this guys! Mouthy and flavor galore. No complaints. Like the long extended hop finish... very very nice.... Brilliant !!!

Can- supposedly a Pliny clone. To be fair it is fairly close. I had a fresh Pliny a few days prior to this and the most notable difference is the hops profile. Pliny has that huge grapefruit/citrus hops profile whereas this carries the same hop bang but not the citrusy profile.

Deep copper pour with a nice lasting head. Sweet fruity aroma with some pine. Great bitter piney taste that has a little bit of grapefruit. Nice lasting bitterness. Really nice beer.

UPDATED: JAN 8, 2013 Pliny-esque. This iipa is resinous with a piney hop presence. Not much citrus but a nice mouthfeel, nice orange brown color, thick lacing and clean aftertaste. Strong beer from an up-and-coming brewer

Hoppy and has a very very caramel color. Has some fruity hopps notes with a bitter and refreshing finish

On tap at Hay Merchant. Pours amber. Nose is full of pine and spruce. One sip is all it takes. This is a surprisingly excellent offering from Southern Star. Full of pine, grapefruit, resin, and some caramel malt, but not too much. Clean and pure all the way to the long bitter finish. Nothing crazy or weird going on here -- just a solid, complete, pure IIPA that in fact reminds me of the West Coast standard, Pliny the Elder. Yep, itís that good, and itís made in Texas.
