COMMERCIAL DESCRIPTION
Cherry saison is concurrent with the best of summer weather. The days are long and warm, and the spring blossoms have gracefully turned to plump drupes. Much in the same way, our Imperial Cherry Saison undergoes subtle but noticable changes while cruising from kettle to bright tank. Like the sun ripening fruit, a pit stop makes this beer better. Cherry Saison is aged with French Oak staves, imparting overtones of spice and balancing the natural sweetness of the cherries. Cherry Saison is the first in this series to incorporate oak aging. Enjoy it as a dessert beer, or tilt it back while sitting under a shady tree on a warm summer afternoon.

A: snifter. pours an opaque peach color with a great off-white head. good/medium retention, spot lacing. S: wonderful malty aroma, with hints of cherries, bittersweet cherries. light hint of oak. T: great flavor, very unique saison. mild cherry flavors, masked by the wheat. light sour tones. mild oak hues. tastes more like a belgian golden ale. M: medium to heavy body. mild carbonation level. slightly creamy. D: very good brew, but not an outstanding saison. very unique idea.

$7 / 220z bomb - This was a gamble pickup and I lost. Nice aroma and appearance, but not much else to say except a not altogether pleasant tasting experience. Cherry tartness is pleasant, but somehow this doesn’t end up working well. I think they wanted the hops to balance out the "belgian candied sugar" and cherries, but I don’t find this appealing. A rare miss from S.T.’s usually awesome 220z bomb collection.

660 ml bottle. Sparkling amber. Crystal clear. Small off-white head that clings to the glass. Light cherry nose with hints of cucumber. Slightly acidic. Light bodied, and feels a little thin and watery in the mouth. A little too bitter to balance. And given the light beer the alcohol is quite noticeable. Disappointing beer from Southern Tier.

(Bottled, 0.65l, sampled 2010-03-09) Clear copper with a tiny head. Sweetish cherry aroma with lots of balancing tartness. Also the flavor has tart cherry and caramely malt, with moderate acidity. Medium body, slightly thin, low in CO2, alcohol hidden. Nowhere near a Saison, and tastes like Belgian lemonade lambics, thanks to oak ageing.

Bomber pours opaque sandy – gold with copper hues and short lived white head. The aroma is the expected sweet cherry notes as well as some yeasty spices, grains, hay, a slight herbal note or two and some floral hops. The taste is pretty crisp starting with a brief sweet pulse of sweet cherries and sweet malts. Those notes are run over by a cherry skin like tannin tartness, spicy yeast, a touch of bubble gum and a sense of beat sugar. Mild tartness and cherry extract take this into the finish.
