Bottle pours red with off-white head. Aroma of flowers. Flavors of pine, vanilla, bubble gum, and cherries with a strong astringent finish. The cherry flavors begin as marischino and changes more to a bing cherry and it lingers on the tongue.

22oz bottle, from Dilly Cafe. Shared with Caterwaul and co. Totally clear darker red color. Thin khaki bubbly head. COuple loose dots and reaches of lace. Big caramel, raisiny, dark fruity nose. Very sweet, sort of cloying taste, with a medicinal bitterness. Bigger body. Light carbonation. Lightly sticky finish. OK, complex aroma, but taste is very harsh, and oxidization doesn’t work with his beer like it sort of did in Cuvee 2. After it sits for a bit the cloying sweet subsides a little, but the taste is still not very pleasant, a little over sweet and medicinally bitter.

Clear Rusty color pour with faint ring of white head. Big malty Massive syrupy raspberry medicine sweetness. Its like a uber sweet molassesy barleywine. Kinda yuck. But at least its not overly hot

12/29/2010: Southern Tier Cuvée 3... Aroma: Deep Belgin fruits, berries, peach; welcomed, refined alcohol. Appearance: Shiny, deep copper color; frothy beige crown. Flavor: Sweet, caramelly malts; deep fruits; subdued oak; toasted coconut and vanilla-almond; warming alochol; non-aggressive bitterness; the alcohol and woodiness help to balance the sweetness. Palate: Medium to medium-full body; smooth; slightly viscous. Overall: I really like this beer; it is a combination of the two previous version, but better than both individually... that’s called synergy!

Lovely coconut and sweet caramel aroma with light oxidation, nicely packaged there. Brilliant garnet, clear, small head. Flavor follows aroma, only a few notes but nicely balanced and aged. Lightly sticky. Better before it started to open up in the snifter. Starting to get a little parmesan cheese on the nose.

Shared by Badgerben. Red color, like a fruit beer. Sweet and boozy, with some oak and lots of sugar. No carbonation, a still beer. A large amount of hops. I can’t drink very much of this.

Dark red color with no head. Light aroma of vanilla, oak, brown sugar and some barrel char. Dark fruit and prune-heavy flavor. Very sweet. Thick body. The oak comes out more as it warms.

Cuvee series three. Hoppy nose with sweet caramel. Golden brown color. Very sweet with lychee fruit and a tart finish. Very thick mouthfeel. Not a great aftertaste.

Bomber from Kybecca Downtown, Fredericksburg, VA. Pours a clear copper color with a thin fizzy tan head. Fair head retention. Big wood aroma with notes of caramel, raisin, soy, vanilla, mild hops. The taste is caramel, wood, apples, vanilla, toast, raisin, mild hops. Medium bodied. Sadly this went straight from un-drinkably sweet to oxidized.

Copper-caramel with modest tan head (oak-aged) / Sweet nose of caramel, cooked citrus, pine, oak / Full, chewy, very sweet and syrupy, with lots of hops which ultimately can’t stand up to the sugar onslaught, and similar for the bitterness on the finish / Sweet flavors of caramel, spun sugar, cooked orange peel, pine, coconut, and oak / Very clumsy. Poured out the rest.

22oz bomber at DC tasting courtesy of argoO! Sticky and sweet. Orange-tan. Sugary and sweet as per ST. Big time oaky tones. Quite smooth and drinkable, especially for the ABV. Tons of oak, without any fuesal alcohol burn. Drinkable, flavorful, asskicker. Lots of residual sugar, but still world class.
