Mid-gold beer with a chamomile aroma. American hop taste (not
Cascade). Mild hops in the aftertaste. Chamomile stands out for me in the taste also, accompanied by light malts, for a fairly soft taste.
Finish is slightly grassy hops mainly. Not a ’wow’ but refreshing. Mastery through simplicity. Delicate floral hop aroma that drenches the room. A completely different use of hops than UnEarthly, but equally applaudable. Initial mouth is fluffy. Taste is soft and linger with bitter leaf notes. Execellent brewers description, somehow this beer really can be best summed up as innocent. This really crushed my expectations. My disappointment was a distant memory after my first whiff of this hall of fame beer. Beautiful floral and piney hop aroma. Starts just a bit sweet on the tongue, and then has a great biting hoppy, piney bitterness, with a grassy resiny hope flavor. Just enough malt to balance the hops, but not enough to be noticed. Finishes with a grassy bitterness that lasted quite some time.
This also happened to be an unbelievable pairing with Humboldt Fog chesse, which had the bitterness and complexity to compete with this masterpiece. Bragesnak (2223), Aarhus, Denmark Apr 8, 2009 From Voldby, DK.
