COMMERCIAL DESCRIPTION
We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.

You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

22oz bottle. Medium white head atop lightly hazed straw body. Aroma is moderately sweet, orange, flower/rosewater, some Belgian yeast, cotton candy. Taste is moderately sweet, orange, some straw, cotton candy. Medium body, some effervescence.

A bit hazy and bubbly. Thick white head. Nose is spicy and yeasty with some dough. Palate is nice and full and dry. Hoppiness late, a bit soapy, and with spices. This is back on track for Southern Tier. A nice experimental offering.

Pours a medium copper gold with a very short lived head. Aroma is floral hops and spices. Taste is somewhat astringent and sharp. The hops dominate the flavor and add to the beer’s bitterness. Too much carbonation for my liking but still a good beer.

Bottle. One of the most active pours I’ve ever witnessed, with frenetic carbonation driving bubbles in every direction, up and and down, making this golden beer look like a chemical experiment, a bit of sediment in there too. The beer delivers a nice sharp, floral yet spicy aroma. The beer drinks with a nice Belgo-character, with alcohol evident, but easy going. Big time effervescence here, and quite a pleasant drink. 22oz bottle. Yellow color, loads of unattractive floaties, tall white effervescent foam. A Sparkling Ale. Nose of Orange Creme, citrus, floral perfume. Nice grain character, Pils & flaked wheat malts, straw flavors. Finishes like a floral Imperial Pils with a dirty Belgian yeast. (3790)

650 mL bottle. Hazy orange with lots of sediment. Small white head. Interesting aroma has Belgian yeast, pilsner malt, lemon. The flavour is much of the same, with a little berry sweetness right before the end, and then some solid bitterness. Interesting, without being outstanding in any way.

Serving: 22oz. bottle from State Line Liquors. It pour a slightly hazy yellow with a bright white head. The nose is very floral with notes of grapefruit and lemon. Surprisingly sweet on the tongue. This one could use a little more balance. The citrus comes through but the florals border on overwhelming. High effervescence and a light to medium mouthfeel. I can’t say this one did much for me.

translucent straw with bubbly white head and yeasty particulates. medium body with medium-high carbonation.

rosehips and grapefruity hops, metallic wild yeast, cracker-like malt.

taste: stale hop bitterness, fruitiness, dry metallic yeast notes, and light cracker-like malt.

if fermented with a rounder, cleaner yeast, this would be really good.

Poured a slightly hazy yellow color with a large foamy white head. Aroma has lots of citrus hops with floral notes. Some apricots as well with a touch of lemon. Taste has lots of citrus hops and flowers. Slightly dry with pale malts. Spicy as well with lemons. Finish is dry with pepper. Overall very nice.
