We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.

You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

Bottle from Mane Liquor. Hazy yellow pour with a small, bubbly white head. Nose is full of flowery roses and lemon. Barely a hint of a malt base in this one. Sweet and citric with an odd, almost savoury, rose note. Works ok. Carbonation is a little high and muddling. Not too bad

Golden brown in color, hazy with a thin head. Nice Belgian yeast aroma and good malt backing. Lots of spice and good amounts of alcohol come through.

Bottle. Definite notes of citrus, bread and belgian spices. Flavor was smooth and enjoyable. The alcohol was present but not overpowering. Nice Job.

22oz bottle into a tulip. From yesterday’s notes. A: Pours a hazy golden color with tons of sediment. The one finger white shaded head retains very nicely and leaves behind some lacing on the glass. The hazy look isn’t the most aesthetically impressive, but usually yields an enjoyable brew elsewhere. S: Aromatically, it’s mostly citrusy hops combined with an herbal component. Yeast seems to come through with a phenolic note, unfortunately. Otherwise, the nose is decent enough. T: First thing that hits the tongue is some citrusy hops. This builds up to a yeasty, bready finish with an herbal aftertaste. Some aspects work, some aspects don’t. M: The body has a light feel (not to be confused with an insubstantial one), but isn’t quite as crisp as some other unfiltered ales. Astringency is fairly heavy and distracting - probably my least favorite feature. Still, for a 9% pale, it’s both drinkable and devoid of booziness. O: A textbook average brew that’s only a couple of tweaks away from being really good. I enjoyed it for what it was, but wouldn’t buy it again.

Bottle: Pour is clear light golden with a modest, fine bubbled white head In this glass. Retention is poor, with light lacing here. The nose lacks the traditional belgian aroma, but there is a heavy grassy, floral hop nose here. overly sweet, grain dominant bready malts are present; theres a bitter hop presence initial, with lemon grass, florals, with a hint of soapiness, moving to sweet bread and I suppose it lacks depth at the finish line. An american double golden ale

Bottle. Pours a hazy golden color with a thin fizzy white head. Aroma was floral with citrus, yeast, lemon and some pale maltiness. Flavor of citrus, fruit, pale malts, herbs and a touch of pine.

Light citrus with an effervescence. Not an overly heavy beer and easy drinking, but on the whole a little disappointing given the pedigree this beer comes from.

Draught at Mikkeller Bar, Copenhagen. Golden beer with a decent lasting offwhite head. Fruity aroma, citrus, grapes, yeasty notes, some spices, hoppy, grassy, roasted notes, some chocolate. Hoppy fruity flavor, yeast notes, spices, hay notes.floral, some warming alcohol. Fruity finish, boozy and with some oranges.

Bottle. Light to moderate grain and straw for the malt, moderate flowers, herbs and lemon for the hops, light soap for the yeast, with a hint of pepper. Head is average to large, frothy, white with good lacing and is mostly diminishing. Color is slightly hazy, but murky on the last pour, light yellow/amber. Flavor starts moderately acidic, then finishes faintly sweet, lightly acidic and lightly to moderately bitter. Palate is light to medium, watery with a carbonation between lively and fizzy and has a tart finish. Light and refreshing, and full of Belgian Strong Ale tastes.
