We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.

You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

pour from a 22oz bomber. Slightly cloudy pale yellow brew with white head. Aroma of citrus, alcohol, a little fruit. Taste is boozy sweet at the start, a little tart, mild citrus and tartness in the finish. Average palate.

Cloudy golden with a lasting white head. Lots of juicy hop aroma with peach, orange and pine, notable alcohol and a slightly dusty note. Sweet and hoppy flavour almost like peach syrup with a bitter finish.

Tap @ Christian firtal, odense. Pours hazy golden with a creamy head. Yeast - vaguely funky. Flowers and bitter hops. Smooth, dry and bitter.

Smells fruity and sweet. Almost like a saison like smell with some different fruit smells (rose hip and hibiscus). Get a bit if the rose hip flavor. Sweet but balanced with some bitter finish (and not overly sweet). Doesn't taste as strong as it is. Solid overall beer. ---Rated via Beer Buddy for iPhone

From cask @ The Pony NYC. Light blurry and golden in the glass with a surprisingly good amounts of big chunky dark floaters. It also has a small bubbly typical cask bubbly white top. Smells lovely. It’s it’s kinda candy sweet in a bizarre way with some sort of rum barreled tone. Lots of yogurt and strawberries here. Unlike any cask beer I’ve ever had before. I’m really enjoying this aroma. Cask-flat on the carbonation of course and the mouthfeel is light oily. No way I would have guessed this was a 9 % abv. Nå traces at all. More light yogurt in the taste. Hoppy frozen strawberries and blueberries with fresh grass in the aftertaste. Really surprising this. Enjoyable! 20.06.2013

On tap September 28, 2013 at ABR. Clear yellow pour. Floral and hoppy aroma and taste. I usually like ST offerings, but no so much with this one.

Bottle from mane liquor. Pours a hazy straw with white fluffy head. Very lively carbonation in this one! Nose is heavy on lemon, other citrus, flowery notes and a slight rose smell from the rose hips. Smells interesting. Taste is sweet, quite light for 9% and fizzy. Also has a weird tang to it, almost tastes like a alcoholic sparkling mineral water. Never had a beer like this before but works pretty well. ---Rated via Beer Buddy for iPhone

Bottle. Lots of coriander spice in aroma and flavor. Very low head and retention. High clarity, but not brilliant. Pale golden color. Citrus pear hops, bready malt, and slight yeast spice in aroma. High bitterness. Alcohol is well hidden and its warming.

Tap. 10oz. Gold color. Citrus floral. Effervescent mouthfeel. Sharp, tart bite. Like your sipping prosecco. Lively flavor. Very unique beer that sparkles in more ways than one.
