COMMERCIAL DESCRIPTION
We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.

You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

Pours a pretty clear solar yellow with a fluffy white head. Aroma is mainly fruity - pear plus some apple and a hint of banana - with malty and yeasty underpinnings. Fruity, malty flavor has a sharp alcohol note and hints of banana and yeast. Firm texture is fizzy and sharp, leaving a persistent tingle that you feel all the way down. Say, I think there is a touch of woody hops in there, and maybe a bit of rose hips in the flavor after taking another test sip. Avoid sea serpents? After a couple bottles of this, you’ll be seeing serpents!

Aroma: The aroma is sweet and fruity, with floral hops, yeast, and a bit of spice
Appearance: Pours a hazy golden color with a lasting sheet of white head and medium lace
Flavor: The taste is spicy, and a little fruity, not too sweet, with a clean, light-medium bitterness
Palate: The body is light-medium, it has a lively carbonation, and wow is the 9% is completely hidden
Overall Impression: This is a pretty interesting and tasty one. I thought the combo of the rose hips and citrusy hops worked nicely. I don’t usually love heavily carbonated beers, but I enjoyed this one.

I sampled this at a beer tasting. This is a light, drinkable beer with a deceptively high alcohol content. It would be very, very easy to drink too much of this beer.

ton of coriander spice in aroma and flavor. very low head and retention. high clarity, but not brilliant. pale golden color. citrus pear hops, bready malt, and slight yeast spice in aroma. high bitterness. alcohol is not masked, its actually warming

bomber - pours hazy pale gold with a ton of fizz coming from the bottom and white head. Nose is a country drive in the spring while sporadically eating cheerios. Flavor is getting grass clipping flung in your mouth at point blank from a riding mower. Really good taste though I sniffed the hops the instant I removed the bottle cap leading me to think this will be super hoppy and unidirectional. Makes me think of an APA and Saison blend.

Interesting suspension of sorts. Something I might call an imperial pilsner. Very clean citrus notes, with moderate bitterness. Not a very remarkable beer except for the fact that it masks a considerable ABV. For me, a S.T. experiment that is a super rare miss from one of my most trustworthy brewers.

Bomber. Yellow gold and hazy. All kinds of yellowish sediment was disturbed when I rolled this beer. An almost white head is at least a finger but is thin bodied. I think I smell floral notes but not from hops. Some pale malts. The aroma is not big but is pleasant and interesting. Some spiced hops are also noted. Ok, lets taste it! The first thing tasted is dry hops. They are floral, sulfur, and citrus. Herbal and citrus with a nice earthiness. This is pleasant with a badass ABV. And the alcohol cannot be tasted. Dangerous stuff! Good stuff, too.

Draft and bottles from Capone’s and Craft Ale. Pours hazy dark straw with off-white head. Nose was pale malt, notes of yeast, fruit, heavy hops. Tastes crisp, hoppy, fruity,, like a slightly souped up Two Hearted. This one was delicious, with such well hidden alcohol that I pegged it at 5%.

22oz bottle poured into a shaker. Pours a lightly hazy dark gold with a finger of white head. Aroma of light citrus and bready yeast. Taste is light sweet and light bitter. Citrus and belgian yeast. Light bodied with a somewhat sticky texture. Lively carbonation and a very long finish. Overall, very good. Easy drinking even in the summer heat.
