COMMERCIAL DESCRIPTION
IPA stands for India Pale Ale and ours is an American version of the classic style. IPA’s namesake lies in its colonial roots. British soldiers on their way to India dark a lot of beer, but found it would go stale on the long voyages. Meanwhile, brewers knew that by adding more hops, the beer would stay fresh. Voila! A new style was born and it is one we are proud to brew. Southern Tier IPA is a triple-hopped on its journey to your glass for a fully aromatic experience.

Poured out of a 12oz bottle, into a pint glass. Copper, amber color, very clear. Head dissipates quickly, probably due to the high amount of hops oil. Some Brussels lace up the sides. Piney hops resin dominates the aroma. Some earth hay and grass notes as well. A hint of caramel from the malt. Overall, it is quite complex due to the many hops varieties. Initial part of the quaff is hops all the way. Bitterness lingers long in the finish with a hint of roasty sweetness. This is a substantial beer. Medium carbonation. Oily and chewy. Nice hoppy offering. This is an IPA lovers beer.

12oz bottle. Pours clear golden with a thin white head. Aromas of pine and grapefruit with some caramel and bready malts. Flavors of caramel malts, light citrus, and good amount of bitterness. Body is thin. Has nice amount of hop bitterness, but no real hop flavor.

Bottle. Pours golden medium white head. Floral and earthy aroma with some bread. Taste is medium bitter with a touch of sweet. Nice bitter hop finish but not overly bitter. Medium-thin body smooth refreshing. Pretty good balance and enjoyable overall.

On tap at Speedy Romeo with Erica in Bk last night. I’ve had this before, but it’s been a couple of years. Pours a medium amber with small to medium off-white head. Smells moderately hoppy and tastes of crisp hops. It’s middle-of-the-road and a little dry until the citra/grapefruit kicks in on the way down. Sort of like a time bomb of grapefruit and bright, floral hop. Really like how that surprised me. Awesome.

(Bottle from the LCBO) Served around 10C in a nonic pint. Pours clear amber with a very small, short-lived white head. Aroma relatively mild, a little bit of citrus, floral hints and a bit of pine. Flavour is sweet malt with a little bit of caramel, bitter pine hops relatively strong. Mouthfeel relatively light-weight with moderate carbonation. Fairly well-balanced IPA, decent maltiness and bitterness but not terribly exciting, sessionable even @ 7%ABV.

Bottle sample at a tasting at Dancing Camel. Thanks zvikar. Pours clear amber with some foam. Nose is sweet citrus, clementine perhaps, and light maple syrup. Tastes bitter with light hints of citrus. Light body, medium carbonation and long finish.

Bottle sample at a tasting at Dancing Camel. Thanks zvikar. DOB 9/23/11. Clear deep golden. Aroma of somewhat stale citric hops and a bit of malt. Flavor is a bit sweetish with a bitter finish with some slightly old hops. Medium-bodied.

Orange or amber in colour, and a fine white head. I’m only starting to get used to these kind of IPAs out of the USofA. Aroma of this one is in a strange way vegetable-like, if you ask me, but it actually stings a bit in the nose. It also reminds me of newly cut grass. Taste is full and bitter all the way through, but there’s a sweet fruity base there as well. (Bottle, 7.3 abv.)
