IPA stands for India Pale Ale and ours is an American version of the classic style. IPAís namesake lies in its colonial roots. British soldiers on their way to India dark a lot of beer, but found it would go stale on the long voyages. Meanwhile, brewers knew that by adding more hops, the beer would stay fresh. Voila! A new style was born and it is one we are proud to brew. Southern Tier IPA is a triple-hopped on its journey to your glass for a fully aromatic experience.

UPDATED: JAN 16, 2008 Tap at David Copperfields. Pale orange colour. Fresh hoppy aromas of grapefruit, pine and tropical pineapple. Light pale malt, some orange peel as well. Really juicy smelling. Flavour delivers, hoppy and tropical with fresh pine and fantastic citrus/fruit flavours. Lots of sweet caramelly maltiness underneath the rich tropical hops. Well-balanced and quite tasty.

Pours deep amber into a shaker. Head quickly recedes to skim the surface. Citrus and pine notes. Well balanced with up front malts which quickly turn to a lasting bitter hop finish.

Dark tan pour with a lasting cream head. Sweet candy orange aroma with touches of vanilla and walnut. I really like this aroma, it is inviting. Orange grass flavor that immediately asserts itself. A bitter little bugger for sure. Nice sweet side comes through midtatste with honey cream and vanilla. Finish is more grass hops and a little tart fruit. I like this one. It is a good one to have while getting paperwork in order to file my taxes. Ap-4 ar-9 tas-7 pal-4 ov-17

Highly fruity nose of amarillo and/or simcoe-like hops, with only moderate suggestions of bitterness, but bursting with cherries, oranges, ruby red grapefruit and just a drizzle of pine on the tail-end. Light crystal malt, basic caramel sugars fill in the cracks. The fruitiness dies down as citrus increases. Deep caramel-amber, quite layered in appearance and actually a bit of a light haziness (though still transparent). Medium-sized head, cream colored, large bubbled, and receding to ring, with a good amount of lace. Citrus and moderate pine flavor backed by light, pale malt sugars bolstered/backed by dry, nearly papery, crystal malts. Slowly transitions in to light munich sourdoughiness with a touch of alcohol dryness. Hops acid is lightly stinging, and some wateriness marches in on end, thanks to the high filtration at Southern Tier. Though itís probably one of the better uses of crystal malt, itís still very hard and drying on the palate, that is to say, malt texture without the sweetness. Moderate carbonation, no yeast apparency.

Pours dark copper with minimal head. Lacking a little on the bitterness. Still has a very nice full flavor though. Different, but a great IPA.

Pours copper color with small head. Citrus hop scent. Nice full body on this one. Really nice citrus flavor, but not much bitterness. Iím pretty surprised with this IPA, as the piney bitterness of the hops is toned down and yet the beer does not taste the least bit watered-down. Not quite hoppy/bitter for my taste, but definitely a delicious IPA.

This tasted very very similar to the stone IPA. Aroma was a nice crisp hoppy citrus. Taste was similar, but with more bitterness than expected...maybe to much for it to be balanced. This beer also seemed to have some floral honey and starchiness in the flavor. Very drinkable and light bodied. Pretty good...but not great.

On tap at Mr Goodbars in Buffalo. I had almost given up hope of finding a good IPA in the region until I tried this one. What a fantastic surprise. On the more bitter end of the IPA continuum, but that tends to be my preference.
