COMMERCIAL DESCRIPTION
IPA stands for India Pale Ale and ours is an American version of the classic style. IPA’s namesake lies in its colonial roots. British soldiers on their way to India dark a lot of beer, but found it would go stale on the long voyages. Meanwhile, brewers knew that by adding more hops, the beer would stay fresh. Voila! A new style was born and it is one we are proud to brew. Southern Tier IPA is a triple-hopped on its journey to your glass for a fully aromatic experience.

Honey-orange color with a thin, dissipating white head. Aroma of blossoms and pine, orange peel and grapefruit, late honey and marmalade. Flavor is initially bitter grapefruit rind, then orange, burnt toffee and a mineral and alcohol finish. Palate is soft and syrupy. This was tasty, floral and bitter but I found the breadth of flavor and palate lacking.

Caramel malt, hay, and pineapple aroma. Golden color, thin white head. Medium bodied, sticky mouthfeel. Orange peel, caramel, and rose hip flavor. Marshmallow peep finish? Very queer, but in an interesting sort of way. Good balance of malt and hop, tons of character. Well done!

12 fl. oz. bottle from LCBO, served cold in a tulip glass.

App.: Clear amber with a nice off-white froth. Aroma: Really fruity malts, nice C-hops, caramel, toffee, grapefruit, dark dried fruits, brown sugar, marmalade on dark rye, a touch of pine and tropical fruit esters. Palate: Medium body, moderate but lively effervescence, a bit syrupy. Flav.: The malts are a little more stern, less fruity and playful, the hops are pine, resin and a lot of grapefruit, some floral honey, some brown sugar; dry with very nice bitterness.

An excellent American IPA. Took me a few 6-packs before I actually saved one to rate...

Pours a clear golden orange color with a thick frothy off-white head that has excellent retention, slowly fading into a lasting cap that leaves streaks of lacing. Floral and citrus hop aroma with hints of citrus fruit, pineapple and grapefruit and a caramel malt backbone. Slightly piny. Very crisp and smooth drinking with a decent balance of malt and hops. A little too malty for my preference taking away from the bitterness and citrus notes from the hops. Still earthy and bitter however with a dry pine finish.
