UPDATED: NOV 13, 2012 Bottle. Full, heavy mouth feel. Rather sweet. Seemed almost port-ish. Bitterness is in there, but hop flavor was muted. Alcohol lets you know it’s there.

Very nice, very hoppy IPA. The oak takes a little bit of the edge off. High alcohol, but way too drinkable.

The color is a cloudy reddish orange with a medium off-white head, and the aroma blends citrus and floarl hops, oak, and a hint of diacetyl. The taste is mildly bitter, slightly sour, mildly boozy, and a touch sweet with a definite oak flavor throughout. The aftertaste is purely hops, booze, and oak, and the palate fuses an oily texture, medium body, and a flat carbonation.

"good stuff, but didn’t leave the holy crap impression that regular old unearthly did. it was already a pretty malty beer and the oak aging seemed to mute the hops even a little more. there was good balance here, just not for a dipa. nice mix of vanilla, oak, malts, and bitter citrus hops."

The body has a deep amber color which has good clarity and visible carbonation. On top sits an average off white colored head that slowly fades and makes some cool lace rings on the glass after each sip. In the nose I pick up an intensely rich mix of malt and hops. There are deep golden raisin and caramel notes from the malt and deep resiny pine like hops back by some citrus notes and hints of oak wood. On the tongue there is a mixing of sweet caramel notes, raisin bread, resiny hops, pine, citrus, orange peel and in hint of oak. Hop bitterness slowly builds more and more towards the finish but still brings some sweetness to keep things juicy. It’s full bodied, bold and heavy or chewy on palate. Carbonation is soft and just keeps things from getting too sticky.

22 ounce bottle. Hazy dark amber color. Rich, earthy, sweet malt aroma. Sweet toasted malt flavor, with a slight noticeable woody character? Sweet corn syrup malt flavor with a touch of resiny hops in mid- taste. Finishes sweet with a subtle spicy hop aftertaste. Not discernable notice of the 11% alcohol.

Aroma of bourbon, wood, pine, hints of citrus. Taste of bourbon, wood, pine, alcohol. A very solid DIPA barrel aged. Well done.

Backlog. Bottle @ Green Lion Inn 2011, aged for about 12 months in average conditions. The aging took a toll, still a solid beer as always from ST.

I had this at Global Brew. Pours orangish with a white head. Taste strong, pine, sweet. I thought this was so so. I would skip this and stay with the Un'earthly that is not oak aged.
