Plums are a diverse group of species, with somewhere between 19 & 40 varieties depending upon whom you ask. We’re using what we consider to be the best to brew with. the Italian plum has beautiful dark skin & the flesh is perfect for fermentation. Plum Noir’s mild sweetness is derived no necessarily from the many malts we use. A bit of plum flavor is present as well as earthy, toasted grains, & hints of caramel with mild coffee overtones.

Not detecting much plum in this one, but it is a pretty great imperial stout nonetheless. Pours dark with a tan head, aroma of coffee, dark fruits, and booze. Taste is smooth malts and dark fruits with hints of coffee and tobacco. Good beer!

Pours a two finger light tan head that fades slowly leaving a good lace. Black color, no highlights. Good carbonation and medium-heavy bodied. Roasted malt nose and flavor is light malty sweetness with some bitter chocolate. Not finding any plum. $9.49 for a 22oz bottle from Julio’s Liquors Marlboro, MA

Dark garnet almost opaque, smallish head no lacing. Aroma is restrained, some dark malt notes like molasses and burnt sugar but also def plums. Flavor tends more toward the chocolate malts with a nice pleasing rounded sweetness from the plums. Balanced finish with bittersweet cocoa, light hopping. Somewhere between semidry and semisweet making very drinkable.

Bottle from Colasanti Market. Pours purplish brown with a thin tan head and a treacle and plum aroma. There is a heavy dark molasses flavor with just the right amount of plum taste. A very nice brew.

Sample at SBWF 2013. Black with a tan head. Light roasted malt, some chocolate, dried fruit and something that reminded of cocoa. The body was medium. This was a fairly soft one.
