Plums are a diverse group of species, with somewhere between 19 & 40 varieties depending upon whom you ask. We’re using what we consider to be the best to brew with. the Italian plum has beautiful dark skin & the flesh is perfect for fermentation. Plum Noir’s mild sweetness is derived no necessarily from the many malts we use. A bit of plum flavor is present as well as earthy, toasted grains, & hints of caramel with mild coffee overtones.

Pours much like dark pepsi with a frothy creamy head. Big aromas of roasted malt, light smoke, zesty hops, coffee, and caramel. Flavors of big roasty malts, caramel, plumbs are almost hidden behind the big roastyness, coffee, and zesty hops. Lightly silky. Light to medium bitter smoke/bitter aftertaste, light to medium sweet.

The aroma is very toasted and has chocolate, coffee, and burnt molasses but no plum. The appearance is red brown with a medium head. The taste is like the aroma and bitter and a touch fruity but not plumy. The palate is average. Overall it’s an average I/porter but I don’t get the plum.

Dark brown pour with tan head. Aroma of toasted caramel and a bit of dark fruit. The taste wasn’t as sweet as I anticipated. The body was a bit weak but roasted bittersweet finish. Not as much plum as I was hoping for

June 26, 2013 - 22 ounce bottle from Zipps. Black pour with some head that faded quickly. Aroma was chocolate, hops, coffee and caramel. Taste was roasted malt, smoke, chocolate, mild caramel and slight bitter finish. Some carbonation and medium bodied. Did not get the plum and wanted this to be more wine like, disappointed.

From a bomber. Pours dark opaque brown with a tho. Fizzy tan head. Smooth light body and very drinkable. Slightly bitter and very mild coffee taste. Hints of plum. Low carbonation. Smells like plum and mild mulling spices.

Bottle. Pours dark brown with a slight ruby tint and thick, frothy beige head. Aroma is chocolate and roasted malts, earthy hops, plums, raisins, and faint vanilla. Flavor is dry, roast malts forward with supporting dark fruit esters, light ash, and some chocolate bitterness; dry finish. Medium body and low carbonation.
