Plums are a diverse group of species, with somewhere between 19 & 40 varieties depending upon whom you ask. We’re using what we consider to be the best to brew with. the Italian plum has beautiful dark skin & the flesh is perfect for fermentation. Plum Noir’s mild sweetness is derived no necessarily from the many malts we use. A bit of plum flavor is present as well as earthy, toasted grains, & hints of caramel with mild coffee overtones.

Very dark beer, very slight ruby hue. Foamy head. Aroma of prune juice and dark chocolate. Tastes like chocolate, straw, coffee, hops. Bitter.

UPDATED: JAN 22, 2014 Here’s a beer with what should be conflicting flavors but pairs up nicely. Dark mahogany with a thick tan foam. Red fruit, chocolate in the aroma; the body livens up from the counterbalanced roasted malts and plum fruitiness. Finish leans to the sweet side finishing in dark chocolate.

Pours black with a moderate beige head. Aroma is sweet plums and other red fruits. Taste is fruit, obvious plum, surprised roasted malts is not very prevalent. Not bad but not very "porteresque"

Big malty aroma - with dark fruit, leather, chewing tobacco. Very dark, somewhat light, filmy head. Decent faux painted label on a 22-oz bomber. Smooth, tangy, toasty/roasty, sweet, a jousting bitterness which is a combination of the roast, alcohol and hops. Sweet caramel going into the finish, a light coffee astringency towards the end as well. A buffered, chewy mouthfeel but with decent carbonation. Finishes out with light acidity and a pleasant bitterness, but there’s a sugary element in there too. A tad metallic on the lips. A nice warmer on a cold night. Publix, Bradfordville. Go Noles, beat Auburn!

A beautiful color, but the nose was lacking. The flavor is quite good, with a nice graininess but a surprisingly smooth finish after a fairly strong body. Very nice finish.

Keg at CBC Clapham. Deep brown pour with a medium beige head that recedes steadily. Partial rings of lacing on the glass. Aroma of dark fruit and malt. Medium to full body with flavors of plum, roast malt and a touch of pine. The finish is fruity with a plum and earthy malt aftertaste. Above average overall.

My first beer of 2014! 22 oz bomber into a snifter glass. Pours dark brown with a small tan head that leaves a good amount of lacing. Aroma of roasted malts, dark chocolate, plums, caramel, brown sugar. Taste is roasted bready malt, caramel, plum, cocoa, and a bit of black licorice. Long finish of caramel and roasted malt. Full bodied, thick texture, average carbonation. Actually a pretty easy drinker for a Blackwater Series beer. Excellent!

Dark brown body with a reddish hue about the edges. Chocolate and light roast aromas. Pleasant, but light. Plums add a slight sweetness and is perceptible. It's an easy drinking porter. The plums add both earthy and sweet characteristics with a hint of leather. Southern Tier often goes overboard with the flavored beers (and I mean that in a good way) and this was much more user friendly than I expected. Medium bodied, smooth, average carbonation. Overall, a very good beer. Nothing terribly complex yet a nice twist on the style. ---Rated via Beer Buddy for iPhone

Deep brown with garner hues. Nose of cocoa powder, molasses, brown sugar, some dark fruit, sherry, cardboard, and soy sauce. Flavor is roasted malt, cocoa, slightly acidic dark fruit, brown sugar, and soy sauce. Medoum palate. Apparently cannot withstand the test of time.
