Light butterscotch under cheesish yeasts in the aroma. Honey-smooth with a light tingle. Hops present in the flavor with bitter citrics after a wonderfully sweet apple pie start. Flavor lasts a long while despite mild astringence. Additional herbals rear late. Very nice.

Taste was upfront strong sweet candi sugar and moderate bitter yeast and spices followed by a strong bitter yeast and spices and a light bitter grassy hops on an average to long finish.
Palate was medium bodied, oily, lively carbonated and moderately astringent.
Overall, I’m not sure what is happening here. It’s like a watered down Belgian tripel. All the elements are there, but watered down. There is no punch. The head is disappointing and the curtness of the aromas and flavors fall short of the original style. Easy and fun to drink though. Too sweet (ie under attenuated) and low carbon dioxide. I think the base beer is there it only needs some tweaking in order to make a nice ale. The beer has a nice earthy bitterness, but is lacking the yeast funk. cking (1012), North Canton, Ohio, USA Jun 6, 2007 Rated 5/4/07: Good beer, borderline decent Tripel. Tantalizing thick golden yellow pour with a mild white head and lackluster lacing. Slightly yeasty scent with a moderate hoppy aroma and mild spiciness. Thick mouthfeel, balanced, and drinkable. Alcohol is very well masked. The flavor bites much more than the mild aroma would indicate. I feel this coming across as a lightly watered down version of a nice Belgian as the flavors are rather subdued and uneventful. Americanized by a solid hop presence producing light citrus and evergreen flavors. Malty, earthy, and fruit flavors. Finishes bitter chewy, and crisp. Grandpa (325), Verona, New York, USA May 31, 2007 It poured a cloudy gold with a white head from a bomber bottle. The first swallow had a slightly sweet, earthy taste with a light, bitter finish. It was light bodied and as refreshing as a summer beer. The high ABV wasn’t noticeable. subsequent swallows did not change my first impression.
