Several glasses at Brauerei Spezial and Cafe Abseits in Nov. 2011: Deep ruby with a faint glimmer of rust. Creamy but broken eggshell head. Bright and secuctive bock aromas swirled with pumpernickel bread, molasses, liquefied toffee, rich smoke pungency and shades of coffee. Firm, lively, tickling carbonation. Stiff cookielike malt and potent smoke links up with ever deepening waves of lush melanoidins. Spicy hops gracefully splash the malty sweetness with captivating precision. Lusciously candyish and plummy bock character proportionately mirrors the smokiness. Delightful depth of sugary malt derivatives evoke notions of coffee and blackcurrant. Dab of plum along with a molasses astringency make themselves present, though the beer never becomes overly sweet. Lustrous flavors of malt continue as the sweetness wanes, lapping the tongue with more cookie, biscuit and toffee. Candyish firmness echoes the exuberant and punchy bock profile. Round and very clean finish is adorned with everlasting malt and a charcoal sharpness drizzled with toffee and creamed hazelnut coffee. Very complex and nicely balanced.

Dark brown with ruby hue, small off white frothy but not very lasting head. Aroma is of medium to strong smoked ham, some caramel, bit bready and roasted malt. Taste is medium sweet caramel and toast, strong smoked ham, bit bready dough, some light herbal bitterness. Medium bodied, soft carbonation.

0.5 l bottle at 6.7% abv from ’De Bierkoning’, best before April 2016. Clear, very dark red with a medium large, frothy, almost stable, tan head. Sweetish-malty, faintly smoky aroma of smoked ham, dark chocolate, raisins and caramel. Sweet-malty, slightly smoky taste of raisins, caramel, dark chocolate and smoked ham, followed by a medium long, slightly bitter finish with dark chocolate and faint notes of smoke. Medium to full body, slightly creamy mouthfeel, soft carbonation. Less intense notes of smoke than expected, just broadening to the complexity of this bock a bit. Good, clearly behind Schlenkerla Urbock though.

50cl bottle at home. Dark amber with a medium beige head. Medium to full body with moderate carbonation. Medium smokey sweetness with subtle bitter tones. Roasted malts, smoke, caramel, raisin, ripe fruits and herbs. Tasty smoked bock.

Draught at Spezial. Brown body and rocky white head. Lovely aroma of smoke, roasted malt, caramel. The taste is medium sweet and light to medium bitter.

Draft at Brauerei Spezial in Bamberg during the Post-Christmas Bamberg Jolly of January 2014. Pours clear amber with a creamy tan head. The nose is rife with toffee, dark fruits, mellow smoke, bread. Medium sweet flavor with lots of toasted toffee, light alcohol, faint earth. Medium bodied, smooth, with fine carbonation. Moderately sweet to finish, with dry toasted caramel, faint earthy bitterness, restrained smoke. Solid.

UPDATED: JAN 15, 2015 Draught at source 12/2014. Well-balanced smoke (dried Schwarzwälder Schinken) & toffee in aroma give way to even more well-balanced Bock flavours of plum compote, maroni, gingerbread, spices, a liquorice lining. Good plain drinkability, for a Bock.

On tap at the Brewpub. Dunkel kupferbraunes Bier mit einer ordentlichen beigen Schaumkrone. Geruch dezent rauchig, Schinken, kräftig malzig. Geschmack sehr rauchig, röstmalzig, holzig, leicht süß, Karamell.

Draft at the brewery in Bamberg, November 2014. Clear chestnut brown with a medium off-white head. Papery, starchy, somewhat bland. Cara malt with light saltiness. Fizzy carbonation is brash on the tongue. Subtle paper smoke character. Lightly ashy more than meaty. Salty in the way of meaty jerky brine and liquid smoke. Served frigid so it takes some time to warm and open up but still it’s more simple than I recall, but it’s been 8 years between samples. From draft at In de Wildeman, Amsterdam in May 2006 I scored it 3.7.

Bamberg jolly day 2 25/01/2014. Draft at the Brewpub bamberg. Mahogany brown colour lasting thin cream head. Aroma is nutty caramel, some battery, raisin and some hot alcohol. Flavour is raisin, caramel, nutty and sweet muscavado sugar. Slick palate. Some berry bitterness in the finish.

Bottle at worldbeertaste’s temporary leaving The Hague tasting. Poured a clear dark brown with a round bubbly head. The aroma is toffee malt light fruit. The flavour is medium bitter woody with a veggie light pumpkin like, weak smoke palate. Medium bodied with soft carbonation.
