COMMERCIAL DESCRIPTION
This style of beer replaces hops with spruce. For this particular batch, Fort George brewers used about two-thirds of their handpicked spruce buds in the initial boil, and during fermentation, “dry spruced” it with the rest. The aroma unmistakably reflects this walk in the trees, while the flavor of citrus comes through in tasting.

I wrote name down as "Spruce Budd Ale".
Slightly hazy yellow color, small white head, lace. Very fruity aroma of mango. Medium-bodied. Flavor of mango and elderflower. Short herbal finish.

Big spruce aroma this was a pretty good attempt. There was a little too much hops covering the spruce flavor.

2010-06-28. Lightly hazy pale yellow body with a small white head. Pleasant mild spruce aroma, lightly herbaceous, sort of flowery/perfumey notes. 6+ Flavour is mild, light spruce and greenery, light bitterness throughout. 6+ Average palate. So its like drinking a tree, but spruce ales are certaintly an acquired tasted. Sweet with a slight piney resin flavor, very bubbly brew, but a little estery mouthfeel, could use some bitterness to balance. Smells great though.

[3014-20100628] Tap. Very fragrant spruce aroma. Hazy, pale orange yellow body with a medium-lasting foamy white head. Tons of rosemary spruce and ginger in the flavour. Medium body. Really interesting mix of flavours.

Tap @ Organic Brewers Fest... Poured golden/yellow with a thin, white head. Nose was yeasty, piney and even some citrus. Dry with hints of light fruit but mostly tasted of spruce and pine, but not over done to come off like Pin Sol. If you like gin, you’d like this. In fact, this brew would be a perfect Beer Back to a Gin. Clean and refreshing finish.

On-Tap @ Bailey’s Taproom poured into Shaker glass. Pours a slightly murky pale yellow with a fat white creamy head that slowly dissolves into a heavy ring around the glass. The aroma is soft malt, some spice and some earthy hops. The flavor is much of the same with the malt taking the forefront. It has a thin, watery body that is not too flattering. Everything about this beer is soft and subtle which doesn’t do it any justice. If at least the flavor or the smell or the body would have been more on par it would have been a decent drink. Just tasted like water overall.
