UPDATED: JAN 15, 2014 Bière jaune dorée, voilée de multiples petites particules, effervescence moyenne, large col blanc mousseux qui forme une belle dentelle sur les parois du verre. Arômes dominants de houblon floral et fruité (agrumes, ananas, pêche…), avec un peu de malt légèrement grillé, caramel, miel, sucre d’orge. Un beau nez, à la fois houblonné et sucré, mais rien d’extraordinaire, et ça manque un peu de complexité. En bouche, pétillement moyen, onctuosité au palais intéressante, consistance liquoreuse, huileuse, typique des bières bien houblonnées. Au goût, on perçoit d’abord un petit malté style sucre d’orge en entrée de bouche, mais il est rapidement tassé par un intense houblon floral aux accents de pamplemousse, et une forte amertume qui prend toute la place. Selon moi, cette bière manque clairement de richesse et d’équilibre, ça manque de malt, le houblon est trop intense et l’amertume est à la limite du tolérable. Mais, au fil des gorgées la langue s’habitue… disons donc que c’est une bière correcte, sans plus.

341 ml bottle from the Bishops Cellar. Pours a clear orange colour with small white head. Aroma is strong grains, some caramel and spicy resin. Flavour is big, lightly toasted grains, gentle caramel and some fairly strong, spicy resinous hops, as well as definite booziness in the finish. Carbonation on the gentler side. Bit of an underwhelming Doubke IPA.

First off, is there such a thing as an english double ipa? Hmm, they might have stumbled across something. Also, they claim citra is in here somwhere, but i cant find it. How do you brew a beer with chinook, cascade and citra and come away with a beer that has zero grapefruit, and almost no citrus aromas or flavours!? This beer is all pine. Pjne aroma and flavour. Very heavy biscuity malts, quite bready also. The finish is very bitter and just pine. Dont get me wrong its not a bad beer, but not what i was expecting, well maybe yes seeing its from st amnbroise, maybe i was expecting this.

341ml bottle. Pours a clear, orange/gold with a half inch white head. Aroma is big and juicy. Pine, citrus, slight bread, and a touch of alcohol. A touch creamy. Really nice. Taste is I solid bitter with lots of pine, resin, some bread and citrus, and a touch of alcohol warmth on a bitter finish. Medium body and carbonation. Slightly resiny in the mouth with a dry finish. Overall a pretty good brew for Quebec. Pine, citrus, and resin, with a big, dry finish. Would get again.

Pours hazy amber with a very thin white head. Aromas of pine, grapefruit with the slightest hint of marmalade. Taste wise this is a very nice blend of hops and malts. Very balanced. An underlying sweetness that is in no way overpowering. Overall, a rock solid double IPA that is more quaffable than a lot of other 8% abv beers.

Great looking beer. Clear copper pour with a large frothy white head and clinging lace. Lovely fresh fruit gum hop aroma. Overall a malty IPA but keeps the fruit hop flavour bursting through. Sweet on the palette. Overall a lovely beer.

This DIPA is much better than the IPA from this brewery. Some aggressive hop bitterness but also a full malt to provide balance. There is some butter flavour likely from diacetyl formed during formation but this is not always a bad thing and in this case adds a bit of creamy flavour. The alcoholic strength is not noticeable and as a hophead I like the aggressive hopping of this.

Pours a clear yellow with a medium white head. Head lasts a good while and doesn’t leave any on the glass. Nose is at first grapefruit, citrus and some apricot. Creamy mouthfeel, with a little sweetness for flavour and a weakish hop finish

hazy orange color with a medium sized head. Aroma is very hoppy and resinous, some sweet mandarin and mango notes, caramel malts and pine. Flavor is caramelly and malty, resinous hops, some orange, hay and gooseberries. Quite aggressive bitter palate, full-bodied and malty
