Aroma is quite nice and quite complex - interesting fruit (citrus, peach, banana), yeast, some spice (coriander), and some alcohol - in fact, the alcohol aroma grows substantially stronger as the beer warms. Flavor is very complex - it starts off sweet and tingly on the tongue (from alcohol and carbonation) with lots of caramel and toffee. Some bitterness, some yeast, and lots of fruitiness arrive at mid-taste. The finish is sweet with lots of alcohol, but also has some mild roasted flavors (toasted bread) and some hints of dark fruit. My original rating of it (had it at a restaurant this past August) was not as agreeable - though I still thought it was very nice (I scored it a 3.9). My taste of it tonight (12/09/2006) is immensely delicious!

A sweet and mellow fruit nose followed by a distinct alcohol note. I’m afraid that I may not be treating this newly bottled beer fairly as it was opened immediately after drinking my first Westy 12 - a bottle that was at least a year and a half old, and a Three Philosophers that was a year old. The St. Bern seems shallow and one dimensional by comparison with the two beers that preceded. Malt and grain flavors dominate with some fruity prune flavors mingling with molasses in the mid palate. It’s a good dry finish, but doesn’t leave me any lingering flavors to remind me of something new. Looking back, I probably should have pulled one from the cellar with a little age on it for this rating. I’ll return for a re-rate if I discover something different in my next taste of this one. Aroma is a rich mix or red wine, doughy yeast, rose-like perfume and chocolate.
Flavours are similarly rich but overshadowed by noticeable alcohol. Lots of doughy yeast, caramel and chocolate though.
Rich body, high carbonation, a bit over the top.

Dark bronzd copper colour with a rich tan head that snaps and crackles. Wonderfull deep aroma of spiced fruit and currants with a sweet backdrop. this is incredible beer. Rciesla (3515), Exit 15W, New Jersey, USA Nov 6, 2009 Bottle. Pours a raisin bruin body with an off white fluffy head. Dark fruity ester aromatic character of plum, raisins, dates, and fig. An unsweetened jam body with a chewy lush vinous core. Plum and caramelized malt, woody vinous notes, with some yeast y spices. Candi sugar, toffee with a modest alcohol warming, finishes dry with abundant fruity esters. I need to age some bottles of this, awesome! Gustav1996 (3), Birmingham, Alabama, USA does not count Nov 5, 2009 750ml bottle. Murky brown in color. Head dissipates quickly. Smells and tastes heavy: booze, fruit and sweets. I have had several of these and it just hasn’t grown on me the way I thought it would. It’s taste is complex but not very balanced... has too much booze at the start and a little too much of a sweet & sour aftertaste. To me the larger 750 is better than the smaller bottle... not so over the top... smells more like a grapes too. This beer is good... I have just had better from the Begiums. daleharshman (181), San Diego, California, USA Nov 4, 2009 11.2 ounce bottle from Total Wine & More in Tustin ($4.29). Yikes, this came all gushing out of the bottle when I opened it. Pours a deep ruby brown with a full four fingers of frothy off-white head which leaves impressive lacing. Aroma has nice sweet fruit (plum, cherry), bready malts, yeast, and some spice. Flavor is the richest of sweet malts, sweet ripe dark fruit, buttery caramel, and lovely spice. Medium-full body with a nice lingering caramel flavor in the finish. Excellent carbonation and mostly imperceptible alcohol. I had this on draft recently, but must say that the flavor is much richer from the bottle. Truly one of the world’s greats.
