DrnkMcDermott (1831), Downers Grove, Illinois, USA Dec 18, 2008 I drink this “Pater” in remembrance of Father Dan O’Sullivan at St. Irenaeus, who married me to my wife and baptized our kids, who enjoyed any beer I brought him and with whom I shared my first DFH WWS. Pours deep brown with a big head that needed some time to settle. Nice smell of raisins and plums, with sweetness emanating from the glass. After that buildup, the taste actually runs a little light. Sweetness is NOT that heavy. Instead, like a modest ale, it simply delivers a nice blend of malt and some nearly German-type hop sharpness. Lot of chunky foam and lace sticking around the glass. Fruitiness not as apparent in the taste. This bottle, at least, slides in more like a basic fine ale. And that’s just fine by me. Aroma is very fruity with some nice yeast spiciness. Flavor is softly sweet with some plum like fruit flavors and clove spice. Not big on the aroma, notice the alcohol and then some drieds fruit if you are looking. Taste is smooth, malt driven with a touch of spice, simple but very drinkable. Bontus (291), Waasmunster, Belgium Dec 7, 2008 Bottle. Pours murky copper dark brown with a mostly diminishing white head. Aroma: clove, nuts, molasses, alcohol, raisins. Definitely a perfect blend between malts and fruits. Medium bodied with a silky mouthfeel. Aftertaste is mostly bitter dry with lingering sweetness and alcoholwarming. RedSox2004 (353), Pacific Palisades, California, USA Dec 2, 2008 Poured deep cherry red, almost opaque, with a generous two-finger head that left a nice creamy film and excellent lacing. Malty aroma with dark fruit like raisins and plums. Same pleasant fruitiness is featured on the tongue, with some molasses, caramel and black pepper. Medium to full body, silky smooth mouthfeel, lively carbonation, and wonderful dark fruit aftertaste. Quite malty, with a subtle hint of dark fruits, carmel, and just a little vanilla. Another winner from St. Bernardus!
